Ingredients

  • 2 cups old fashioned oats
  • 2 cups plain Greek yogurt
  • 2 cups skim milk
  • 2-3 large ripe peaches peeled, pitted, & diced
  • 2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 1/2 tsp vanilla extract

Instructions

  • Add all of the ingredients to a large mixing bowl. Stir everything together until evenly combined.
  • Cover the bowl tightly with plastic wrap and refrigerate for at least four hours, but up to overnight.
  • Serve the overnight oats hot or cold- topped with a sprinkle of ground cinnamon on top.

Notes

  • This recipe yields around 4 cups of oats, and a single serving is roughly one cup of oats.
  • Top this with cinnamon and even a sprinkle of chopped nuts for a little protein and crunch.
  • You can use frozen peaches in this recipe, but make sure they're completely thawed first so that no excess liquid gets in the oats and makes them soupy.
