Unwrap and thinly slice the brie with a serrated knife to remove the top.
1 8 oz round of brie cheese
Roll the puff pastry out on a lightly floured surface into an 11" square and place the brie in the very center. Spread the jam out in a thin layer on top (cut side) of the cheese.
1 sheet puff pastry, 2 tbsp sweet jam
Starting at one corner fold the dough over the brie in pleats, brushing with the egg wash for glue in between each, until it's completely covered. Cut off any excess pastry, and brush the top and sides of the pastry with the egg wash.

Sprinkle the sugar evenly out overtop of the pastry and carefully transfer the pastry wrapped cheese to a parchment lined baking sheet.
1 tbsp brown sugar
Bake at 350° for 35-40 minutes, until the pastry's puffed and golden brown. Carefully remove the hot dish from the oven and let the pastry rest and cool for 10 minutes.
Serve warm with sliced baguette, sliced apples, and/or crackers.
