Pumpkin Butter Roasted Pork Tenderloin

Pumpkin butter roasted pork tenderloin is a festive twist on a classic main dish that needs only a handful of ingredients. Pork tenderloin gets seared and then rubbed with a sweet and savory combination of pumpkin butter, apple sauce, and thyme. A delicious main for any holiday dinner!

Ingredients

  • 1 lb pork tenderloin
  • 1 tbsp extra virgin olive oil
  • salt & pepper to taste
  • 1/3 - 1/2 cup pumpkin butter
  • 2 tbsp unsweetened apple sauce
  • 1 tbsp fresh thyme leaves

Instructions

  • Preheat your oven to 425° with the main rack set in the middle. Also set a cast iron skillet to heat over medium high heat.
  • Add the pumpkin butter, apple sauce, and thyme to a small mixing bowl. Whisk them together until evenly combined. Set aside.
    1/3 - 1/2 cup pumpkin butter, 2 tbsp unsweetened apple sauce, 1 tbsp fresh thyme leaves
  • Remove the pork tenderloin from it's packaging, drain off any juices, and then pat it completely dry using paper towels. Season it liberally on all sides with salt & pepper.

  • Once the skillet's hot add the olive oil and sear the pork loin on all sides, roughly 2 minutes per side and turning as needed. Remove the skillet from heat.

  • Spread the pumpkin thyme sauce evenly out overtop of the seared pork loin, using it all.
  • Bake for 15-20 minutes, or until a meat thermometer reads 145°.
  • Transfer the pork loin to a cutting board and let it rest for 10 - 15 minutes.
  • Using a sharp knife slice the pork loin into 1/4 or 1/2 inch slices, serve warm, and enjoy!

Notes

  • Make sure the skillet is nice and hot and the oil is shimmery before you sear the pork.
  • You'll know the pork is ready to turn when it easily pulls away from the skillet.
  • Don't skip the resting time. It helps make sure the pork tenderloin is tender and juicy.
