Preheat your oven to 425° with the main rack set in the middle. Also set a cast iron skillet to heat over medium high heat.
Add the pumpkin butter, apple sauce, and thyme to a small mixing bowl. Whisk them together until evenly combined. Set aside.

Remove the pork tenderloin from it's packaging, drain off any juices, and then pat it completely dry using paper towels. Season it liberally on all sides with salt & pepper.

Once the skillet's hot add the olive oil and sear the pork loin on all sides, roughly 2 minutes per side and turning as needed. Remove the skillet from heat.
1 tbsp extra virgin olive oil
Spread the pumpkin thyme sauce evenly out overtop of the seared pork loin, using it all.
Bake for 15-20 minutes, or until a meat thermometer reads 145°.
Transfer the pork loin to a cutting board and let it rest for 10 - 15 minutes.
Using a sharp knife slice the pork loin into 1/4 or 1/2 inch slices, serve warm, and enjoy!
