Pumpkin Microwave Mug Cake

- 3 tbsp flour
- 3 tbsp brown sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp pumpkin pie spice
- 1 tbsp unsalted butter melted
- 1 large egg beaten
- 1 tbsp heavy cream
- 1/4 cup pumpkin puree NOT pie filling
- 1/4 tsp vanilla extract
Add the flour, sugar, baking powder, salt, and pie spice to a large microwave safe mug. Whisk together to evenly combine.

Add the butter, egg, cream, pumpkin, and extract to the mug. Stir until evenly incorporated.

Microwave for 3 minutes.
Insert a toothpick into the center to check for doneness, and if it comes out clean carefully remove the hot mug from the microwave and let it cool slightly.
Top with whipped cream, if desired, and a pinch of ground cinnamon.

- Spray the inside of the mug with nonstick spray before adding the cake ingredients to make cleanup easier.
- Make sure you're using pumpkin puree and NOT pumpkin pie filling.
- When combining the ingredients together in the mug try to avoid overmixing, as this can cause the cake to be more dense and chewy instead of light & fluffy.
- Don't have any pumpkin pie spice handy? You can substitute apple pie spice, which is almost identical. or you can use just ground cinnamon.
- I recommend topping serving this pumpkin flavored dessert with a dollop of whipped cream and a sprinkle of ground cinnamon. Other tasty topping options include: powdered sugar, a drizzle of syrup, or a little schmear of cream cheese frosting.
