Ingredients

  • 2 cups all purpose flour
  • 1 tbsp sugar
  • 2 tsp garlic powder
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 4 tbsp butter melted & slightly cooled
  • 1 1/3 cups buttermilk
  • 2 large eggs
  • 3 cups shredded cheddar cheese

Instructions

  • Add the flour, sugar, garlic, baking powder, salt, and baking soda to a large mixing bowl. Whisk together until evenly combined. Add 2 cups of shredded cheese, then whisk again until evenly combined.
2 cups all purpose flour, 1 tbsp sugar, 2 tsp garlic powder, 2 tsp baking powder, 1 tsp salt, 1/2 tsp baking soda, 3 cups shredded cheddar cheese
  • To a second large mixing bowl add the butter, buttermilk, and eggs. Whisk them together until evenly combined.
4 tbsp butter, 1 1/3 cups buttermilk, 2 large eggs
  • Pour the wet ingredients into the dry and fold together using a spatula, just until evenly combined. Do NOT overmix.
  • Transfer the batter to a greased 9x5" loaf pan and spread out in an even layer. Sprinkle the remaining cheese evenly out overtop of the dough.
  • Top the pan loosely with foil and bake at 350° for 40 minutes. Remove the foil and continue baking for another 20 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread rest for 10 minutes, then run a butterknife along the edges of the pan to 'release' the bread. Turn out onto a cutting board.
  • Slice, serve, and enjoy!

Notes

  • Don't over mix the batter. You just want to combine the ingredients. Over mixing makes for dense bread.
  • You can substitute shredded cheddar with other shredded cheese if you prefer. Shredded jack, pepper jack, or Italian cheese would all be yummy.
  • Letting the bread rest will help it set up before you turn it out.
