Add the flour, sugar, garlic, baking powder, salt, and baking soda to a large mixing bowl. Whisk together until evenly combined. Add 2 cups of shredded cheese, then whisk again until evenly combined.

To a second large mixing bowl add the butter, buttermilk, and eggs. Whisk them together until evenly combined.

Pour the wet ingredients into the dry and fold together using a spatula, just until evenly combined. Do NOT overmix.
Transfer the batter to a greased 9x5" loaf pan and spread out in an even layer. Sprinkle the remaining cheese evenly out overtop of the dough.
Top the pan loosely with foil and bake at 350° for 40 minutes. Remove the foil and continue baking for another 20 minutes, or until a toothpick inserted in the center comes out clean.
Let the bread rest for 10 minutes, then run a butterknife along the edges of the pan to 'release' the bread. Turn out onto a cutting board.
