- 1/4 cup butter
- 1/4 cup flour
- 2 cups chicken broth
- 1 1/4 tsp poultry seasoning
- 1/2 tsp ground thyme
- salt & pepper to taste
Add the butter to a large skillet set over medium high heat.

Once melted add the flour, whisking until evenly combined, and cook for 1-2 minutes- whisking constantly.

Slowly pour in the broth, whisking constantly, until it's been completely incorproated and the mixture's smooth and lump free.
2 cups chicken broth
Bring the mixture to a gently simmer and cook for 2-3 minutes, whisking often.
Add the seasonings to the gravy, stirring to evenly combine.
1 1/4 tsp poultry seasoning, 1/2 tsp ground thyme, salt & pepper
Continue simmering, stirring often, for 5-7 minutes- just until the gravy's reached your desired thickness.

- The most important thing when you make gravy is to never stop whisking. You can't over whisk gravy but you can get lumps from not whisking enough.
- Make sure you are stirring the broth into the gravy a little at a time so it can smoothly combine. When you are stirring the broth in, whisk it pretty vigorously to prevent lumps.
- The gravy will keep thickening as it cools.
- Go easy on the salt. Chicken broth can be salty on its own. You can always add more salt to gravy but you can't make an overly salty gravy less salty.
