Add the cake mix, oil, and eggs to a large mixing bowl. Beat together with an electric hand mixer until evenly combined.

Evenly divide the batter into three different bowls. Add blue gel to one bowl, red to another, and leave the third one plain white- then mix in until evenly combined.

Spread the powdered sugar out in an even layer on a shallow plate.

Using a medium (1 1/2 tbsp) cookie scoop, scoop a ball of dough and roll it into a ball. Roll it in the powdered sugar then transfer it to a parchment paper lined baking sheet. Repeat until all the dough's been used. Then move onto the next color, and continue until all the cookies have been prepared.
Bake at 350° for 10-12 minutes, or until the edges are set and the cookies are puffy.
Remove from the oven and let the cookies cool, they will finish firming up as they do.
