Scotch Eggs (Air Fryer Recipe)
Air fryer Scotch eggs give you all the flavor of the traditional breakfast treat without the mess or grease from deep frying them. Crispy golden brown sausage balls feature a warm hard boiled egg at the center for a filling, grab and go breakfast treat.

- 6 hard boiled eggs peeled & patted dry
- 1 lb ground sausage
- 1/4 cup flour
- 1 large egg beaten
- 1/2 cup plain bread crumbs
Divide the sausage into 6 equal portions, then flatten them slightly and wrap each sausage circle around an egg until each is evenly incased and sealed in sausage.

Roll each sausage wrapped egg in flour, then in the beaten egg. Roll in bread crumbs until each is evenly coated.
1/4 cup flour, 1 large egg, 1/2 cup plain bread crumbs
Transfer the eggs to the basket of an air fryer, making sure they don't touch.
Air fry at 390° for 12 minutes, turning them over halfway through.
Serve warm & enjoy!
- Make sure to pat the eggs dry before encasing them in the sausage. Any excess moisture will prevent the sausage coating from sticking when cooking.
- When coating the balls in the beaten egg, make sure to turn the ball and get the egg coating equally onto all parts. The breading won't stick to any bits without the egg.
- Use tongs to flip and remove the hot sausage balls from the air fryer to prevent burning your hands and fingers.
