Smoked Baby Potatoes
Smoked baby potatoes are the side dish you need this summer. Beer mustard and barbecue rub bring tons of flavor to complement the smokiness of the potatoes.

- 2 lbs little (bite sized) potatoes
- 1/2 cup beer mustard
- 4 tbsp barbecue rub
- 1 tbsp chopped fresh parsley leaves for garnish, optional
Thoroughly wash the potatoes, pat them dry, then transfer them to a large mixing bowl.
2 lbs little (bite sized) potatoes
Add the mustard to the mixing bowl then stir everything together until they're evenly coated.
1/2 cup beer mustard
Sprinkle the rub overtop, then gently toss again until the potatoes are evenly coated.
4 tbsp barbecue rub
Transfer the seasoned potatoes to a disposable 9x13" aluminum pan and spread them out in an even layer.
Smoke at 250° for 2 - 2 1/2 hours. Test to see if the potatoes are fork tender. If not smoke another 15 minutes.
Once tender transfer them to a serving dish, serve, and enjoy!
1 tbsp chopped fresh parsley leaves
- Use smaller potatoes or cut them into roughly 2 inch pieces.
- Scrub them well since you won't peel them.
- You can adjust the seasoning and add more or less of the barbecue rub, or add salt and pepper if you like.
