Smoked Baby Potatoes

Smoked baby potatoes are the side dish you need this summer. Beer mustard and barbecue rub bring tons of flavor to complement the smokiness of the potatoes.

Ingredients

  • 2 lbs little (bite sized) potatoes
  • 1/2 cup beer mustard
  • 4 tbsp barbecue rub
  • 1 tbsp chopped fresh parsley leaves for garnish, optional

Instructions

  • Thoroughly wash the potatoes, pat them dry, then transfer them to a large mixing bowl.
    2 lbs little (bite sized) potatoes
  • Add the mustard to the mixing bowl then stir everything together until they're evenly coated.
    1/2 cup beer mustard
  • Sprinkle the rub overtop, then gently toss again until the potatoes are evenly coated.
    4 tbsp barbecue rub
  • Transfer the seasoned potatoes to a disposable 9x13" aluminum pan and spread them out in an even layer.
  • Smoke at 250° for 2 - 2 1/2 hours. Test to see if the potatoes are fork tender. If not smoke another 15 minutes.
  • Once tender transfer them to a serving dish, serve, and enjoy!
    1 tbsp chopped fresh parsley leaves

Notes

  • Use smaller potatoes or cut them into roughly 2 inch pieces.
  • Scrub them well since you won't peel them.
  • You can adjust the seasoning and add more or less of the barbecue rub, or add salt and pepper if you like.
