Spicy Hot Dog Meat Sauce (New York Style)

- 1 lb 80/20 ground beef
- 1 cup dried minced onion
- 1 quart water
- 1 tbsp chili powder
- 1 tbsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp ground cinnamon
- salt & pepper to taste
Add the beef to a large pot set over medium high heat. Cook, crumbling as it does, until cooked through.

Add the remaining ingredients to the pot, then stir everything together until evenly combined.
1 cup dried minced onion, 1 quart water, 1 tbsp chili powder, 1 tbsp smoked paprika, 1 tsp cayenne pepper, 1 tsp ground cinnamon, salt & pepper
Bring the pot to a boil, then immediately reduce the heat to low.
Simmer for 3 hours, stirring often, and adding a bit of extra water if the sauce becomes too dry.
Carefully taste (chili will be hot) and adjust the seasonings, if needed. Let the chili cool.
Serve and enjoy, or cool completely and freeze to use later.
- Be sure to let the chili cook for the full 3 hours, this will allow the flavors to fully develop.
- If the chili dog sauce gets too dry, add a bit of extra water.
- Be careful when you taste it to check the seasonings! It will be hot.
