Tomato Relish

Tomato relish is a sweet and tangy condiment bursting with sweet fresh tomatoes, bright lime, ginger paste and a savory blend of spices for bold flavor. It’s an easy way to add a fresh, zesty kick to everything from grilled meats to sandwiches.

Ingredients

  • 5 cups chopped & seeded tomatoes
  • 2 limes
  • 1 1/2 tbsp ginger paste
  • 1 cup sugar
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground cloves
  • 1/2 red onion peeled & diced

Instructions

  • Set a large skillet on the stove. Add the tomatoes, juice of both limes, ginger, sugar, spices, and onions to it. Stir everything together until evenly combined.
    5 cups chopped & seeded tomatoes, 2 limes, 1 1/2 tbsp ginger paste, 1 cup sugar, 1/2 tsp crushed red pepper flakes, 1/2 tsp ground cinnamon, 1/8 tsp ground cloves, 1/2 red onion
  • Bring the mixture to a simmer over medium high heat, stirring often, then reduce heat and cook down.
  • The mixture will become very juicy, which is normal, and continue cooking (stirring frequently) until the color deepens and the juices reduce by roughly 1/4 of the volume.
  • When the mixture's thickened, but still somewhat juicy, it's done- roughly 20-25 minutes. Remove the skillet from heat.
  • Serve and enjoy!

Notes

  • If you use other varieties of tomatoes, keep in mind they might have more liquid. This increases the cook time and means you will need more tomatoes overall.
  • Adjust the seasoning to suit your taste.
  • Make sure to serve it often to keep it from burning.
