Tomato Relish

- 5 cups chopped & seeded tomatoes
- 2 limes
- 1 1/2 tbsp ginger paste
- 1 cup sugar
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp ground cinnamon
- 1/8 tsp ground cloves
- 1/2 red onion peeled & diced
Set a large skillet on the stove. Add the tomatoes, juice of both limes, ginger, sugar, spices, and onions to it. Stir everything together until evenly combined.
5 cups chopped & seeded tomatoes, 2 limes, 1 1/2 tbsp ginger paste, 1 cup sugar, 1/2 tsp crushed red pepper flakes, 1/2 tsp ground cinnamon, 1/8 tsp ground cloves, 1/2 red onion
Bring the mixture to a simmer over medium high heat, stirring often, then reduce heat and cook down.
The mixture will become very juicy, which is normal, and continue cooking (stirring frequently) until the color deepens and the juices reduce by roughly 1/4 of the volume.
When the mixture's thickened, but still somewhat juicy, it's done- roughly 20-25 minutes. Remove the skillet from heat.

- If you use other varieties of tomatoes, keep in mind they might have more liquid. This increases the cook time and means you will need more tomatoes overall.
- Adjust the seasoning to suit your taste.
- Make sure to serve it often to keep it from burning.
