Instant Pot bacon ranch potatoes are a creamy, flavor packed side dish you won’t be able to get enough of. Red potatoes get cooked to perfection with diced bacon, plenty of ranch seasoning and slathered in a creamy base.
I love to use my Instant Pot to make things faster and easier.
It’s also key for when I am making lots of different dishes on the stove top like during holidays.
And let me tell you, these creamy bacon ranch potatoes are a deliciously addicting way to use your Instant Pot- for any occasion!
The potatoes are perfectly cooked, loaded with bacon and ranch flavor, and in a rich creamy base.
Any time you serve these up, it’s a treat!
Ingredients
To make this you’ll need:
- Potatoes– Red potatoes washed and cut into 1 inch cubes.
- Bacon– Dice it.
- Ranch seasoning– The kind in a packet
- Chicken broth– If you are concerned about it being too salty, use low sodium chicken broth.
- Black pepper– Just a pinch!
- Cream cheese– Cut into cubes
- Chopped fresh parsley– For garnish
How to Make
Like most Instant Pot recipes, these Instant Pot bacon ranch potatoes are super easy to make!
To do it, put the liner in the Instant Pot and then turn the Pot on saute mode.
Cook the bacon on saute mode, stirring consistently, until it’s crispy.
Once the bacon is nice and crisp, press the cancel button and scoop the bacon out onto a paper towel lined plate.
Set the bacon aside.
Then stir the potatoes, ranch seasoning, pepper and chicken broth together in the liner of the pot.
Secure the lid on the pot, making sure the vent valve is sealed.
Pressure cook the potatoes for 7 minutes.
After the pot beeps, carefully open the vent valve to release the pressure.
Open Slid and stir the cubed cream cheese and cooked bacon into the pot until incorporated.
Garnish with parsley if desired and serve.
Enjoy!
Storing Leftovers
Store leftover potatoes in an air tight container in the fridge for up to 4 days.
Reheat them in the microwave until warmed through.
Tips and Tricks
- I do not recommend adding salt to this recipe as the ranch dressing mix is already very salty on its own.
- Can substitute real bacon bits for the slices of bacon, if desired.
- Make it a meal and top the potatoes with some shredded rotisserie chicken and cheddar cheese!
