We love Tex Mex food in our house.
And while tacos are a staple, I like to switch things up from time to time with a new main or a twist on a classic side dish.
This cheesy cilantro and sour cream rice is just that.
A twist on the classic Mexican rice side that is so easy to make and so delicious.
Ingredients
To make this you’ll need:
- Rice– Cook your rice ahead of time. While the recipe calls for white rice, you could use brown rice if you prefer.
- Sour cream– Full fat is best
- Diced green chiles– A small drained can. You could substitute chopped pickled jalapenos if you prefer.
- Cheese– Shredded Mexican blend cheese
- Corn– A drained can of corn
- Spices– Chopped cilantro, ground cumin, salt and pepper
How to Make
This cheesy Mexican rice is so easy to make!
To do it, just add all of the ingredients except for half of the shredded cheese to a large mixing bowl and stir them together.
Then transfer the rice mixture into an 8×8 baking dish lightly sprayed with nonstick cooking spray.
Spread out in an even layer and sprinkle the remaining cheese evenly out overtop.
Bake at 350° for 25-30 minutes, until hot and bubbly and the cheese is melted.
Serve warm and enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat in the microwave until warmed through.
Tips and Tricks
- This recipe can be doubled to feed a crowd! Just bake it in a 9×13″ baking dish instead.
- Want to turn this into a meal? Add a pound of cooked ground beef, shredded rotisserie chicken, or even a can of drained black beans.
- Don’t want to fuss with cooking rice before making this? Buy the microwaveable bags of rice and just microwave it before you make this and you’re good to go!
