But just because I’m strapped for time doesn’t mean I can’t get a tasty, balanced meal on the table that everyone gladly eats.
This air fryer pineapple chicken is full of big flavors but short on prep time.
With its blend of sweet and savory tangy flavor and it’s quick prep, this chicken will be a regular addition to your weekly menu.
Ingredients
To make this you’ll need:
- Chicken– Boneless, skinless chicken breast trimmed of fat and diced into more or less equal sized pieces.
- Red bell peppers– Seeded and cut into 1″ pieces.
- Barbecue sauce– Your favorite variety
- Teriyaki sauce– Again your favorite kind
- Ginger paste– You can normally find this in the produce department near the herbs.
- Garlic– Minced
- Pineapple– Fresh pineapple chunked
- Rice– Steamed white rice for serving
How to Make
Air fryer pineapple chicken is so easy to make!
Just stir all the ingredients except for the rice together in a large mixing bowl until combined.
Then spread out half of the mixture in an even layer in the basket of the air fryer.
Air fryer the pineapple chicken at 400 for 10 to 12 minutes, shaking and stirring the mixture around halfway through.
Put the cooked chicken mixture on a waiting serving platter and repeat the same cooking process with the rest of the mixture.
Serve over steamed rice and garnished with thinly sliced green onions if desired.

Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 3 days.
If possible, store the chicken and veggies separately from the rice.
Why does pineapple go so well with chicken?

Tips and Tricks
- Don’t have red bell pepper? You can substitute any color though red is the sweetest, most mellow pepper.
- As written this recipe isn’t spicy, but the barbecue sauce you pick will really play a big factor in how much heat it has. If you choose a spicy barbecue sauce, this recipe will have more heat.
- While I suggest white rice, you can use any kind of rice you have on hand.

Ingredients
- 1 1/2 - 2 lbs boneless, skinless chicken breats trimmed of fat and diced
- 2 large red bell peppers seeded & cut into 1" pieces
- heaping 1/3 cup barbecue sauce
- heaping 1/3 cup teriyaki sauce
- 1 1/2 tbsp ginger paste
- 1 tbsp minced garlic
- 4 cups fresh pineapple chunks drained - roughly 1 1/2 lb
- steamed white rice for serving
Instructions
- Add all of the ingredients, except the rice, to a large mixing bowl. Stir together until evenly combined.1 1/2 - 2 lbs boneless, skinless chicken breats, 2 large red bell peppers, heaping 1/3 cup barbecue sauce, heaping 1/3 cup teriyaki sauce, 1 1/2 tbsp ginger paste, 1 tbsp minced garlic, 4 cups fresh pineapple chunks
- Add half the mixture to the basket of an air fryer in an even layer and cook at 400° for 10-12 minutes- shaking and stirring the mixture halfway through the cook time.
- Transfer the cooked chicken to a waiting serving platter, and repeat to finish the rest.
- Serve over steamed white rice, garnished with thinly sliced green onions, and enjoy!steamed white rice
