Ingredients
To make these you’ll need:
- Banana nut muffins– The mini kind from the bakery
- Cream cheese frosting– Your favorite brand of premade cream cheese frosting
- Vanilla almond bark– For the candy coating. You can generally find this in the baking aisle near the baker’s chocolate bars.
- Crushed walnuts– Optional for decoration
- Kitchen supplies– Cake pop sticks and parchment paper. You can find cake pop sticks in the baking portion of most craft stores.
How to Make
These banana bread are so easy!
Just add your mini muffins and cream cheese frosting to a stand mixer fitted with the paddle attachment.
Mix on high until the mixture is the consistency of play dough.
Use a cookie scoop to remove dough and roll into a ball, trying to keep them all the same size and smooth.
Refrigerate the banana cake balls for an hour so they are good and chilled when you dip them.
Once you are ready to coat them in the melted almond bark, microwave the almond bark for one minute.
After a minute, stir and microwave again for another minute, stirring again after the minute is up.
At this point the bark should be melted and smooth, but if not microwave again for 30 seconds.
Once the bark is ready, run a knife through the walnuts until they are finely chopped and put them in a bowl.
Then dip the end of a cake pop stick in the melted chocolate and push into the center of your banana cake ball.
Let the chocolate set.
Once the chocolate is set, dip the rest of the cake pop in chocolate and roll it around above the bowl to let the excess drip off.
Immediately roll in walnuts and set on parchment paper to set.
Once hardened, serve and enjoy!
Storing
Store any leftovers in a covered cake pan or tupperware container in the fridge for up to a week.
Tips and Tricks
- Don’t overcook the almond bark. You want to heat it in short intervals and stir after each one to make sure the bark melts without scorching. If it scorches, the bark will seize up, get clumpy, and just generally taste bad.
- Make sure to let the cake balls chill before you dip them in the melted chocolate. It will be easier to work with if you do.
- No almond bark? You could also melt white chocolate chips and stir in a teaspoon of coconut oil for a similar coating.
