Barbecue Chicken Mac And Cheese (From A Box)

Now that back to school season is here life gets even busier.

This time of year dinner time is a struggle because we are always rushing to or from something.

Who has the time to muster up a big meal on a school or work night?

Not me, but my kids have to eat.

And we have a box of mac and cheese comin’ in hot to save the day!

Add a little chopped rotisserie chicken, some barbecue sauce, and extra cheese?

Barbecue chicken mac and cheese is done!

A complete meal from a simple box of mac and cheese.

Serve it with a bag of salad and dinner is ready!

Ingredients

To make this you’ll need:

  • Mac and cheese– I’m using a 24 ounce box of Velveeta shells and cheese. You can use a similarly sized package of your preferred brand, just make sure you also have the other ingredients the box calls for if you sub in Kraft or a store brand.
  • Barbecue sauce– Your favorite kind
  • Extra cheese– Shredded cheddar but really you could use shredded jack, American, or anything you think tastes good with barbecue sauce.
  • Chicken– Chopped rotisserie chicken. You could even use leftover grilled or roast chicken.

How to Make

Barbecue mac and cheese is a snap to make!

Just make the pasta according to the directions.

Once it’s cooked, strain the noodles and then return them to the pot.

Stir in the packet of cheese sauce followed by the barbecue sauce, chicken, and shredded cheese.

Keep stirring until the shredded cheese melts.

Serve it warm and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat them in the microwave until warmed through.

Tips and Tricks

  • You can substitute another type of mac and cheese that doesn’t come with the cheese sauce. If you do this, you’ll need to have butter and milk on hand too.
  • Have leftover pulled pork? Use that instead!
  • Top it with a handful of french fried onions for a crunchy topping.

Ingredients

  • 1/3 - 1/2 cup barbecue sauce
  • 1/2 cup shredded cheddar cheese
  • 1 1/2 cups chopped rotisserie chicken

Instructions

  • Cook the pasta according to the package directions. Strain the noodles and return them to the pot.
