Bisquick taco bake is a cheesy, beef dish your whole family will love. This easy taco casserole features all the best Tex Mex flavors in a quick and easy dinner that feeds a crowd.
I almost always have a box of Bisquick on hand.
It’s perfect for whipping up so much more than just pancakes with!
One of my favorite things is a good Bisquick casserole like this taco bake.
It’s so hearty and comforting and can feed a large family easily.
Plus it makes the best leftovers so you can get an extra meal out of this.
Ingredients
To make this you’ll need:
- Ground beef– I like to use lean ground beef so there’s less fat to drain off. You could substitute ground chicken or turkey.
- Onion– A white, diced onion.
- Taco seasoning– The mild kind in packets.
- Refried beans– Optional but it makes it extra creamy.
- Eggs– For binding
- Milk– Any kind of dairy milk will work.
- Bisquick– The dry mix. You could substitute for another brand or a cornbread mix but you might need to adjust the time.
- Toppings– Sour cream, shredded lettuce, cheese, diced tomatoes, and black olives.
How to Make
This casserole is so easy to make.
To do it, cook the ground beef and onion in a large skillet over medium heat, crumbling it as it cooks, until it’s cooked through.
Then, strain off the grease and return the beef to the skillet.
Add the taco seasoning and prepare according to the directions on the packages.
Stir in the refried beans until evenly incorporated and warmed through.
Then, spray a 9×13″ casserole dish lightly with nonstick cooking spray and spread the meat mixture evenly out into the dish. Set it aside.
Whisk the eggs and milk together in a large mixing bowl until evenly combined.
Once it’s combined, whisk in the Bisquick.
When it’s evenly combined, pour the Bisquick mix evenly out over the ground beef.
Bake the casserole at 400° for 20-25 minutes, or until the casserole is cooked through and golden brown on top.
Set the casserole aside and let it cook for 10 minutes, then spread the sour cream out overtop in an even layer.
Top with shredded lettuce, followed by the cheese, then tomatoes, and black olives.
Serve warm and enjoy!
Storing Leftovers
You can store leftovers in the fridge tightly wrapped for up to 5 days. Reheat in a hot oven until warmed through.
Can I make this Bisquick Taco Bake ahead of time?
Yes! You can put this together the day before like other impossible pies and leave it covered and unbaked in your fridge.
Then bake it in the oven.
Just be aware it will take longer to bake since the casserole will be cold.
Tips and Tricks
- If you’re unsure if the casserole is cooked through, insert a toothpick into the very center. If it comes out clean, it’s done and if not let the casserole bake a couple minutes more.
- Let the casserole cool significantly (but not completely) before adding the sour cream, otherwise it will run.
- Like different toppings on your tacos? Feel free to add or substitute and enjoy this to your family’s liking.
- Other topping ideas include sliced avocado, jalapenos, fresh pico de gallo or salsa.

Ingredients
- 2 lbs ground beef
- 1 small white onion diced
- 2 packets mild taco seasoning
- 1 small can refried beans optional
- 4 large eggs
- 3/4 cups milk
- 1 1/4 cups bisquick baking mix
- 3/4 cup sour cream
- 2 cups shredded lettuce
- 1 1/2 cups shredded cheddar cheese
- 1 cup chopped roma tomatoes
- sliced black olives
Instructions
- In a large skillet, cook the ground beef & diced onion over medium heat. Break the meat up, crumbling it as it cooks, until it's all cooked through.
- Strain off any grease, returning the beef to the skillet.
- Add the taco seasoning, and prepare according to the directions on the packages. Stir in the refried beans until evenly incorporated and warmed through.
- Spray a 9x13" casserole dish lightly with non stick cooking spray. Spread the meat mixture evenly out into the dish. Set aside.
