Blueberry Pie Bars

Blueberry pie bars are a delicious dessert bar loaded with all the flavors of your favorite pie. Sweet blueberry filling gets sandwiched between a soft blondie like crust and baked to bubbly perfection.

When the weather starts warming up, potlucks, picnics, and barbecues start in full force.

We are either hosting one or going to one at least once a week.

And I never show up empty handed.

I like to bring a seasonal item like a pasta salad or dessert along with me.

And these blueberry pie bars are the ultimate dessert to bring to any warm weather occasion.

They are always a crowd favorite that disappears almost as soon as they are set out.

Ingredients

To make this you’ll need:

  • Butter– Salted, softened butter
  • Sugar– Granulated
  • Vanilla extract– Real is always best
  • Eggs– Room temperature
  • Flour– All purpose
  • Baking powder– For leavening
  • Blueberry pie filling– Store bought is fine or you can make your own.
  • Glaze ingredients– Powdered sugar, vanilla extract, and milk

How to Make

Blueberry pie bars are pretty easy to make.

Just cream the softened butter and sugar together in a mixing bowl with a hand mixer until they are smooth and creamy.

Then beat in the eggs and vanilla extract.

Stir together the flour and baking powder in a second mixing bowl.

Slowly add the flour mixture into the wet batter, mixing together until completely incorporated.

Scoop all of the batter minus 1 and 1/2 cups into a 9×13″ baking dish sprayed with nonstick cooking spray.

Spread it out in an even layer.

Then top the crust layer with an even layer of the blueberry pie filling.

Top the blueberry filling layer with teaspoon sized dollops of the reserved dough.

Bake the blueberry pie bars at 350° for 35 minutes, just until the batter’s set.

Carefully remove the hot dish from the oven and let it cool for 40 minutes.

Once the bars are cool, mix the remaining ingredients together until a glaze is formed, thinning with 1-2 tablespoons of milk as needed.

Drizzle the glaze over the dish.

Slice, serve, and enjoy!

Storing Leftovers

Store leftovers tightly wrapped in the baking dish in the fridge for up to a week.

Tips and Tricks

  • Let the butter and eggs come to room temperature on the counter before you start.
  • Make sure the bars are nice and cool before you drizzle on the glaze.
  • You could add a little lemon zest to the glaze for a lemon blueberry bar.

Ingredients

  • 1 cup salted butter softened
  • 1 3/4 cups sugar
  • 1 tsp vanilla extract
  • 4 eggs at room temperature
  • 3 cups flour
  • 1 1/2 tsp baking powder
  • 2 3/4 cups blueberry pie filling
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp milk

Instructions

  • Add the butter and sugar to a mixing bowl and using a hand mixer whip them together until smooth & creamy. Add the eggs and extract, mixing together again until evenly combined.

  • To another mixing bowl add the flour and baking powder then stir them together until evenly combined. Slowly add the flour mixture into the wet batter, mixing together until completely incorporated.
    3 cups flour, 1 1/2 tsp baking powder
  • Spray a 9x13" baking dish with nonstick cooking spray. Set aside 1 1/2 cups of batter then transfer the rest to the prepared baking dish and spread it out in an even layer.
  • Spread the blueberry pie filling evenly out overtop, then drop teaspoon sized dollops of the reserved dough evenly out overtop.

  • Bake at 350° for 35 minutes, just until the batter's set. Carefully remove the hot dish from the oven and let it cool for 40 minutes.
