Not only does cooking meat and veggies in foil packets result in extra juicy, extra flavorful meals, but it also means almost no clean up.

And these cajun chicken foil packets have almost no clean up and have so much flavor.
We’re talking buttery chicken, smoked sausage, green beans, and potatoes with zesty sausage and sprinkled with Cajun seasoning.

Ingredients
To make this you’ll need:
- Chicken breasts– Boneless, skinless breasts trimmed of extra fat and cut into 1″ pieces.
- Sausage– Andoullie sausage cut into 2″ pieces. You can sub kielbasa for a less spicy option in place of the andoullie sausage.
- Baby potatoes– Cut in half or quarters, depending on how big the potatoes are
- Green beans– Fresh beans, washed and trimmed.
- Cajun seasoning
- Butter– Melted and cooled
How to Make
These Cajun chicken packets are so easy to make!
Just add all of the ingredients to a large mixing bowl and toss them together until evenly combined.
Then, make four 8×8″ aluminum foil sheets and put them on a large baking sheet.
Divide the seasoned chicken and vegetable mixture out evenly between the foil sheets, spooning into the middle of each sheet.
Then, fold each sheet in half to close and crimp the edges together tightly to completely seal.
Bake the packets at 425℉ for 20-25 minutes.
Let them rest for 5 minutes before peeling opening and serving.

Yes!
You can easily grill these chicken foil packets!
Just prepare the ingredients and packets the same way and make sure they’re sealed completely.
Grill over medium high heat for 25 minutes until the potatoes are tender.
Turn the packets halfway through cooking.
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 5 days.
Tips and Tricks
- Be sure your foil packets are sealed completely to close. If they aren’t the steam won’t build up properly and they won’t cook through.
- Make sure to carefully open the cooked foil packets. The trapped steam is very hot and can easily burn you if you aren’t careful.
- If you want things more spicy, add a little extra seasoning. For a less spicy version, use less Cajun seasoning.
