How to Make
This garlic Parmesan chicken and potatoes is pretty easy!
Just peel and dice the potatoes then add them to a large mixing bowl.
Then toss the potatoes with olive oil, garlic, paprika, salt and pepper. T
Transfer the seasoned potatoes to the basket of an air fryer and cook at 400° for 20 minutes, shaking them to toss at the halfway point.
Set the potatoes aside.
While the potatoes are in the middle of their air fry, toss together the chicken and Italian seasoning in a small bowl.
Melt the butter in a large oven safe skillet set over medium high heat.
When the butter melts, add the chicken to the skillet and cook, stirring often, until it’s cooked through.
Stir the air fried potatoes and garlic sauce into the skillet, spreading it out in an even layer.
Sprinkle the shredded cheese evenly out overtop.
Bake at 400° for 20-25 minutes, until hot and bubbly and the cheese is golden brown.
Carefully remove the hot skillet from the oven and let it rest for 5 minutes.
Serve warm and enjoy!

Storing Leftovers
Store leftovers in an airtight container in the fridge.
For the best results for reheating, spread any leftovers out in oven safe skillet and reheat in a 400 degree oven until warmed through.

Tips and Tricks
- Don’t have an air fryer? Spread the potatoes out onto a sheet pan lined with foil and bake them for about 25 minutes at 400. During that time, prep the rest of the recipe as directed and finish the same way you would with air fryer potatoes.
- You could make this with baby potatoes or red potatoes and skip peeling. Just quarter the potatoes instead.
- Don’t skip the rest time. The cheese and sauce need a chance to set a bit before you serve it.
