Chicken & Broccoli Mac And Cheese (From A Box)

Chicken and broccoli mac and cheese dresses up a box of macaroni and cheese and turns it into a full, family friendly meal that will even have everyone eating their veggies! Just 6 ingredients and in the time it takes to boil the noodles, dinner is done!

Boxed mac and cheese is a staple in this house, going right back to the days my kids were in high chairs.

While those days are long since past, they still love a good box of mac and cheese.

And so do I.

Especially when I can just stir in a few extras and call it dinner.

It makes my busy nights easier and still gets everyone to the table.

Ingredients

To make this you’ll need:

  • Boxed macaroni and cheese– A 24 ounce box of Velveeta shells and cheese. You can substitute a similar amount of a different variety of macaroni and cheese, but keep in mind the kinds with the powdered cheese packets often need extra ingredients like butter and milk.
  • Broccoli florets– 2 frozen 10 ounce bags of broccoli florets
  • Grilled chicken– You can buy premade grilled chicken strips in the frozen food section or the poultry/meat section of your grocery store. You could also use leftover grilled chicken or even rotisserie chicken.
  • Cream of broccoli soup– Don’t have cream of broccoli? Substitute pretty much any cream of soup you have on hand.
  • Half and half– Optional. To thin the sauce a bit.
  • Shredded cheddar cheese– You could substitute other shredded cheese if you want.

Ingredients

This chicken and broccoli mac and cheese is so easy!

Just cook the mac and cheese according to the direction the package.

While the mac is cooking, steam the broccoli in the microwave and warm the chicken up.

Strain the broccoli and the cooked macaroni.

Then return the macaroni to the pot you cooked it in and stir in the rest of the ingredients until everything is combined and the shredded cheese melts.

Serve and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat them loosely covered in the microwave until warmed through.

Tips and Tricks

  • Don’t substitute fresh broccoli. The frozen broccoli steams faster and will have a better texture for the finished dish.
  • You can adjust the amount of half and half you add based on how creamy you want the pasta.
  • For extra flavor and crunch, top this with french fried onions.

Ingredients

  • 1 24 oz box velveeta shells and cheese
  • 2 10 oz bags frozen broccoli florets
  • 1 - 1 1/2 cups chopped grilled chicken
  • 1 10.5 oz can cream of broccoli soup
  • 1/2 cup half and half optional
  • 1/2 cup shredded cheddar cheese

Instructions

  • Cook the mac and cheese according to the package directions. Strain and return to the pot.

  • While the pasta's cooking, steam the broccoli in the microwave. Strain and set aside.
    2 10 oz bags frozen broccoli florets
  • Add the remaining ingredients, including the broccoli to the pasta. Stir until everything's evenly combined and the cheese is melted.
    1 - 1 1/2 cups chopped grilled chicken, 1 10.5 oz can cream of broccoli soup, 1/2 cup half and half, 1/2 cup shredded cheddar cheese
  • Serve warm and enjoy!
