Just melt one tablespoon of butter in a large skillet over medium heat and then brown the sliced hot dogs on both sides in the melted butter.
Once they are browned, transfer them to a waiting plate while you assemble the quesadillas.
To do it, spread half of the chili onto a tortilla in an even layer followed by half of the sliced hot dogs and half the cheese.
Cover the filling with another tortilla.
Melt the rest of the butter in the skillet and then cook the quesadilla over medium low heat until the cheese starts to melt and the filling heats.
Flip it over and cook on the second side until it is golden brown and crispy.
Repeat with the remaining tortillas, hot dogs, cheese, and chili.
Slice into triangles and enjoy!

While this meal is a fabulous way to use up leftover hot dogs, it doesn’t make for great leftovers itself.
