Look, I am not a baker ok.
I can throw together a box mix but scratch baking is not my thing.
So I am always on the hunt for a way to take box mixes to the next level without a lot of extra work.
This cinnamon roll poke cake does just that.
It ends up tasting just like a cinnamon roll and my kids can’t get enough it.
Ingredients
For the cake itself, you need a box of white cake mix and the ingredients listed on the box.
For the filling you need:
- Butter– Melt it.
- Brown sugar– Light or dark either way.
- Spices– Cinnamon and vanilla extract.
- Sweetened condensed milk– Canned or homemade.
For the frosting you’ll need:
- Cream cheese– Let it soften before using it.
- Butter– Again let it soften first.
- Sugar– Powdered.
- Vanilla– Use real vanilla and not imitation.
- Sweetened condensed milk– Just a touch.
How to Make
Let’s break this down into parts: making the cake, the filling, the icing, and assembling.
To make the cake:
Prepare the cake batter according to the package direction.
Transfer the cake batter to a lightly grease 9×13″ baking dish, making sure to spread it out in an even layer.
Bake the cake according to the package directions. Then remove, and let the cake cool significantly.
To make the filling:
When the cake has cooled, you can make the filling.
To do it, add all of the filling ingredients to a mixing bowl, and whip together using a hand mixer until evenly incorporated and smooth.
To make the icing:
Add the softened cream cheese and butter to another mixing bowl.
Cream them together with a hand mixer until evenly combined and smooth.
Add the powdered sugar, extract, and condensed milk to the cream cheese mixture.
Then, whip together, slowly at first and turning up the speed, until all the ingredients are evenly incorporated and the frosting is light and fluffy.
To assemble
Once the cake has cooled, use the handle of a wooden spoon to poke holes evenly out all over it.
Then, pour the filling mixture evenly out over the cake.
Spread it out with a spatula to completely cover the cake and fill the holes.
Set the cake aside to finish cooling completely.
Spread the cream cheese frosting evenly out over the top of the cake.
Chill for 30 minutes to an hour so the cake can set.
Cut, serve, and enjoy!
Storing Leftovers
Store leftover cinnamon roll poke cake tightly wrapped in the fridge for up to 4 days.
Tips and Tricks
- The cake can be served immediately without chilling, but chilling does allow the filling to set up in the holes and for the frosting to sink down into them as well.
- You can substitute french vanilla cake mix or plain yellow cake mix instead of white cake. Both turned out great, and my kids say the yellow cake gives it more of a honey bun taste.
- If you want more of a cinnamon taste, finish the cake off by sprinkling the frosting with cinnamon sugar dust- talking to you cinnamon lovers!

Instructions
To Make The Cake
- Add the cake mix and all of the ingredients called for in the package directions to a large mixing bowl. Whip together using a hand mixer, just until smooth & evenly combined.
- Transfer the cake batter to a lightly grease 9x13" baking dish, making sure to spread it out in an even layer.
- Bake the cake according to the package directions. Then remove, and let the cake cool significantly.
- Once the cake has cooled, use the handle of a wooden spoon to poke holes evenly out all over it.

- Spread the cream cheese frosting evenly out over the top of the cake.
- Chill for 30 minutes - 1 hour, then slice, serve & enjoy!

I am a custom baker. I wanted something different for a birthday cake and saw this pop up on my Facebook. It is a very yummy recipe. The only thing I will change next time is the incorporation of the brown sugar. It needs to be melted with the butter to break it down. It is grainy in the cake. I also added more cinnamon because we like it strong. It was a huge hit. Thank you.
