Circus Animal Cookie Fudge

Circus animal cookie fudge is an easy cheese fudge made extra special with the adorable cookies and sprinkles. Kids and adults will love this easy colorful candy!

I am all about super easy desserts and treats.

And really so are my kids.

Granted they don’t care if what they are eating is easy, but they do care that I make it for them.

And I am so much more likely to make treats if I can do it in a snap like I can with this fudge.

What is cheese fudge?

This version of white chocolate fudge has a cream cheese base.

It still has a similar firm consistency of traditional fudge.

The cream cheese though does give the candy a cheesecake like taste.

Ingredients

To make this you’ll need:

  • Cream cheese– Use full fat cream cheese and let it soften a touch on the counter before you use it.
  • White chocolate– Go for a high quality baking bark.
  • Butter– Melted butter
  • Circus cookies– You’ll need to crumble some to fold into the fudge and save some whole ones for decorating the too,
  • Decorations– Rainbow sprinkles, red food coloring and extra cookies.

How to Make

This fudge is so easy to put together.

To do it, beat your cream cheese on high until smooth with an electric mixer.

Chop the white chocolate bark and put it into a microwave safe bowl.

Then, microwave the bark in 30 second intervals until melted and smooth. Stir in between each interval.

Once the chocolate is melted, melt the butter.

Then, add melted chocolate, melted butter, and crumbled cookies to the mixing bowl with the whipped cream cheese.

Mix with a hand mixer on high until well combined.

Scoop the mixture into a parchment lined 9×13 baking dish. Make sure the parchment paper overhangs the dish slightly.

Smooth out evenly.

Add 4 to 5 drops of red food coloring.

Knead your fudge with your hands to mix in food coloring until light pink and then press it back into the pan.

Sprinkle with rainbow sprinkles and remaining cookie crumbles.

Cover and refrigerate overnight.

Cut into even squares.

Serve and enjoy!

How long does cheese fudge last?

If you store it in an airtight container in the fridge, it will last for 2 weeks.

How to Cut Fudge

To cut the fudge, I recommend lifting the set fudge out of the pan using the parchment paper.

Then use a sharp knife and cut it carefully into squares.

Tips and Tricks

  • Get quality chocolate bark since it is the star flavor in the fudge.
  • Don’t substitute white chocolate chips. The coating on the chips could change the consistency of the fudge.
  • Make sure not to rush when you melt the chocolate. If you melt it and don’t use the interval stir method, you may burn the chocolate. Burned chocolate will seize and be unusable.

Ingredients

  • 1 8 oz package of Cream Cheese
  • 2 lbs. White Chocolate Baking Bark melted
  • 2 tablespoons of Melted Butter
  • ¾ of a cup of Circus Cookies crumbled
  • Red Food Coloring
  • Rainbow Sprinkles topping
  • Circus Cookie topping

Instructions

  • Start by beating your cream cheese on high until smooth.
