Creamy Chicken Enchilada Dip

This creamy chicken enchilada dip is rich, cheesy, and packed with bold flavor in every bite. It’s an easy appetizer that comes together quickly and is perfect for parties, game day, or snacking.

The very premise of it has you dunking chips into it, and that already makes it ten times more fun as a food.

And this creamy chicken enchilada dip is one of the most fun, delicious dips out there.

It’s loaded with a creamy, cheesy base, shredded chicken, black beans, and enchilada sauce so you know it disappears almost as soon as it gets put on the table.

You only need 5 minutes of prep and 25 minutes of bake time to get this on the table.

So it’s perfect for those times when you need a crowd pleaser and you need it fast!

Serve it up with tortilla chips and your other favorite dippers and watch everyone devour it.

Ingredients

To make this you’ll need:

  • Cream cheese– Softened to room temperature
  • Chicken– Chopped rotisserie chicken with the skin and bones removed. You could use drained, canned chicken if you prefer.
  • Black beans– Canned black beans, drained and rinsed.
  • Cheese– A combination of shredded Monterey Jack and shredded cheddar. You could also use all of one or the other.
  • Enchilada sauce– The red kind. Use whatever heat level your crowd prefers.
  • Green chiles– A 4 ounce can of diced green chiles, drained.
  • Taco seasoning– The premade kind in the packet is perfect!
  • Cilantro leaves– Fresh chopped leaves for garnish

How to Make

To make this creamy enchilada just the cream cheese, chicken, beans, 1 cup of each cheese, enchilada sauce, chiles, and taco seasoning together in a large mixing bowl until everything’s evenly combined.

Spread the dip out in a large oven safe skillet or dish.

Sprinkle the remaining cheese evenly out overtop.

Bake at 350° for 20-25 minutes or just until the dip’s bubbly.

Carefully take the dip out of the oven and let it rest for a couple minutes.

Sprinkle cilantro leaves evenly out overtop, if using them.

Serve it warm with chips and your other favorite dippers.

Dipping Ideas

This dip pairs really well with:

Storing Leftovers

Store leftovers in the fridge either tightly wrapped in the baking dish or transfered to an airtight container.

Reheat in the microwave or a 300 degree oven until warmed through.

Tips and Tricks

  • If you want this super mild, you can omit the chiles. While they don’t have a lot of heat, they do add just a bit of bite.
  • Make sure you use room temperature cream cheese so it blends easier.
  • Other yummy garnish ideas include sliced jalapenos or chopped green onions. Use these instead of or in addition to the cilantro.

Ingredients

  • 8 oz cream cheese softened
  • 1 1/2 cups chopped rotisserie chicken
  • 1 15 oz can black beans drained & rinsed
  • 1 1/2 cups shredded Monterrey jack cheese
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup red enchilada sauce
  • 1 4 oz can diced green chiles drained
  • 2 tsp taco seasoning
  • fresh cilantro leaves for garnish

Instructions
