This crispy cornflake chicken is a savory spin on my Grandma’s classic dish. Moist, tender chicken breasts are baked in a crunchy seasoned cereal coating and ready in under 30 minutes. It’s an easy dinner that even the pickiest easters will love!
A quick and easy meal is never far from my mind, especially when I’m busy chauffeuring kids around.
Everybody’s got to eat, but I have very little time to babysit a hot meal.
I need something with minimal prep work that will taste great.
Picky eater approved in fact!
Thankfully this crispy cornflake chicken checks all those boxes.
It also only needs a handful of ingredients, making it one of my family’s tried & true go to’s on busy evenings.
Plus it’s just plain delicious!
Ingredients Needed
You only need a handful of ingredients to make this easy baked crispy chicken recipe.
Just another reason it’s on of my favorites!
You’ll need:
- Chicken – This recipe calls for 1 1/2 pounds of boneless, skinless chicken breasts. That’s going to be roughly 4 normal sized cuts of chicken- if you get extra large breasts, you will need to cook them to temperature instead of time.
- Cornflake Cereal – Any variety of cornflake cereal, but make sure it’s plain. No flavoring or add-ins.
- Seasonings – The breading is seasoned with a simple mixture of Italian seasoning, garlic powder, salt, & pepper.
- Eggs – 2 large eggs, beaten together. They form the base that helps the crunchy outer coating adhere.
- Butter – This recipe requires 1/2 stick, or 8 tablespoons, of butter- melted.
How To Make
Whenever I’m short on time, this crispy cornflake chicken is one of my go to recipes.
Mostly because it’s quick & easy, but also scrumptious.
Nobody complains when this crispy baked chicken is on the menu!
Start by prepping the dressings.
Add the cornflake cereal to a large ziplocking bag.
Using a rolling pin, or a sturdy spoon, crush the cereal until it’s mostly crumbs.
Add the Italians seasoning, garlic powder, salt, and pepper to the bag of crushed cornflakes cereal.
Seal the bag and toss everything together until evenly combined.
Set the bag of seasoned cornflake crumbs aside.
If you haven’t already, trim the chicken breasts of any fat.
Using paper towels pat the prepared chicken breasts dry.
Crack the eggs into a small mixing bowl. Whisk them together until smooth and creamy.
Start with one chicken breast, then add if to the egg mixture.
Turn it to coat, then lift it out using two forks or a pair of tongs. Let excess egg drip off briefly.
Transfer the egg drenched chicken breast to the seasoned cornflake mixture.
Turn the chicken in the bag to coat it evenly and press the cornflake crumb coating in, as needed, to adhered evenly.
Transfer the cornflake coated chicken breast to a greased baking sheet.
Repeat until all the chicken’s coated and on the baking sheet.
Drizzle the melted butter evenly out over the coated chicken.
Bake the crispy cornflake chicken breasts at 400F for 25-30 minutes.
Serve them warm & enjoy!
How To Store Cornflake Crusted Chicken
This is one of those things best made and serve fresh.
You’ll get the crispiest results that way.
If you have leftovers though, you can store than in an air tight container in the refrigerator for up to 3 days.
You can reheat them in the microwave.
For crispiest results though, reheat them in an air fryer.
TIPS & TRICKS
- If you’re worried about the meat being cooked through the chicken is done when a meat thermometer reads 165F
- You can use chicken tenderloin instead of breasts (makes yummy tenders), but adjust the cook time to only 15-20 minutes since they will cook more quickly.

- Pair it with a simple side salad or a steamed green vegetable for an easy meal.

Crispy Baked Cornflake Chicken
Ingredients
- 1 1/2 lbs boneless skinless chicken breasts trimmed of fat
- 3 cups cornflake cereal
- 1 1/2 tsp Italian seasoning
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 large eggs beaten
- 1/2 stick butter melted
Instructions
- Add the cornflakes to a large ziplocking bag (gallon size). Using a rolling pin crush them. Add the seasonings to the bag, seal to close, and give it a shake to evenly mix them together. Set aside.
- Add both eggs to a small mixing bowl and whisk them together until evenly combined. Set aside.
- Using paper towels, pat all of the chicken dry. Working with one chicken breast at a time, dunk a breast in the egg bowl turning to coat.
- Hold it over the bowl and let excess egg drip off for a second, then transfer it into the seasoned cornflake mixture. Turn the chicken to evenly coat, and press in the cornflakes as necessary.
- Transfer the coated chicken to a non stick baking sheet. Repeat until all the chicken's been coated.
- Spoon the butter evenly out over the cornflake chicken breasts.
- Bake the chicken at 400° for 25-30 minutes.
- Serve warm & enjoy!
