Cucumber tea sandwiches are a dish that proves that tasty elegance can be easy! These pretty sandwiches are literally the perfect party food for baby and bridal showers, brunch parties, tea parties, or even as appetizers before a holiday dinner!

So I like to have the ingredients on hand for all sorts of easy finger foods.
These cucumber tea sandwiches are perfect for that!
They are tasty and so easy to make that you can throw them together at the drop of a hat.
What are cucumber tea sandwiches?
Cucumber tea sandwiches are little crustless sandwiches that originated out of Kentucky as a staple menu option for Kentucky derby parties.
They generally feature crustless white bread cut into small triangles or rectangles and spread with cream cheese and thinly sliced English cucumbers.
Ingredients
To make these you’ll need:
- Bread– Plain white sandwich bread. No fancy bread for these!
- Cucumber– It has to be an English cucumber because other varieties have more water and can lead to soggy sandwiches.
- Cream cheese– Plain, full fat cream cheese.
- Mayo– Real full fat mayonnaise and not mayonnaise style dressing
- Seasoning– Finely chopped fresh dill, lemon juice, garlic powder, and salt and pepper
How to Make
Making cucumber tea sandwiches is so easy!
Start by cutting the crusts off all the bread.
Then, set the bread aside.
After you’ve prepped the bread, add the cream cheese, mayo, and all seasonings except the salt and pepper to a mixing bowl.
Blend the mixture all together until evenly combined using a hand mixer.
Set the spread aside.
Then, use a vegetable peeler to peel most of the skin on the cucumber, leaving a couple thin strips on.
Thinly slice the cucumber.
Spread the inside half of each slice of bread evenly with the cream cheese mixture.
Then top the bottom halves evenly with the sliced cucumber. Season with salt & pepper.
Add the tops to close the sandwiches.
Cut each of the six sandwiches into four even triangles.
Serve and enjoy!
Storing leftovers
Store any leftovers tightly wrapped in the fridge.
I recommend eating them within a day.
Tips and Tricks
- Make sure to use a sharp knife to cut the sandwiches so they don’t tear. If they tear, they will still taste great, the presentation just won’t be as pretty.
- You can use a mandolin to more easily thinly slice the cucumbers. You want the slices to be uniform and roughly 1/8″ wide.
- It is important to use English cucumbers for this recipe. Other varieties contain more water and can lead to soggy sandwiches.
- Prefer less chunky vegetables? Grate the cucumbers, squeeze them between layers of paper towels to remove excess moisture, and then mix them in with the rest of the cream cheese mixture.
