Easter Cookie Bars

Easter cookie bars turn two packages of cookie mix into a delicious, festive springtime dessert! These easy bars only need 5 ingredients to put together and every bunny will love them!

I love a good holiday dessert.

But I hate spending a ton of time and effort on one.

And one of my favorite things to put out is a cookie bar.

All the flavor of a cookie but no actual making cookies.

They are a mix and spread out situation as opposed to actually taking the time to make individual cookies.

That easy prep makes them perfect for a last minute dessert!

Ingredients

To make these you’ll need:

  • Cookie mix– 1 17.5 ounce package of sugar cookie mix and 1 17.5 ounce package of chocolate chip cookie mix
  • Eggs
  • Butter– Salted butter at room temperature
  • M&M’s– Easter or springtime ones.

How to Make

These Easter cookie bars are so easy!

Just whisk the cookie mixes together in a large mixing bowl to combine them.

Then beat the eggs and softened, salted butter into the mix with a hand mixture until a smoothie cookie dough forms.

Fold about 3/4s of the candy into the cookie dough.

Then spread the dough out in an even layer into a 9×13 baking dish sprayed with nonstick spray.

Spread the rest of the M&M’s out evenly over the cookie dough.

Bake the cookie bars at 325 for 35 to 45 minutes or until a toothpick inserted in the center comes out clean and the edges are golden brown.

Let the bars cool completely.

Slice and serve.

Enjoy!

Storing

Store leftovers in an airtight container on the counter for up to 5 days.

Tips and Tricks

  • You can use this same recipe for any occasion- just switch the M&M’s to match the holiday!
  • Use salted butter because you want the salt to balance the sweet.
  • You could sprinkle on Easter sprinkles or even frost the bars with your favorite store bought frosting and then add sprinkles!

Ingredients

  • 1 17.5 oz pkg sugar cookie mix
  • 1 17.5 oz pkg chocolate chip cookie mix
  • 2 large eggs
  • 2 sticks salted butter softened to room temperature
  • 1 cup Easter m&m's divided

Instructions

  • Spray a 9x13" baking dish with non stick cooking spray or line with parchment paper. Set aside.
  • Add both cookie mixes to a large mixing bowl and whisk together until evenly combined.
    1 17.5 oz pkg sugar cookie mix, 1 17.5 oz pkg chocolate chip cookie mix
  • Add the eggs and butter to the cookie mix and use a hand mixer to blend together until a smooth cookie dough forms.
    2 large eggs, 2 sticks salted butter
  • Add 3/4 of the candy to the dough and fold in using a spatula until evenly combined.
    1 cup Easter m&m's
  • Spread the dough out in the prepared dish in an even layer. Spread the rest of the candy evenly out overtop.
  • Bake at 325° for 35-45 minutes, or until a toothpick inserted in the center comes out clean and the edges are golden brown.
  • Take out of the oven and let the bars cool completely, then slice and serve.
