To make the filling, beat the cream cheese and sweetened condensed milk together with an electric beater until it’s all smooth.
Then mix in the lime juice and zest.
Pour the filling onto the pie crust and put the pie in the fridge to set for at least 4 hours prior to serving.
When you are ready to serve, top with whipped cream and lime slices.
Slice, serve, and enjoy.
Storing
Store this pie covered in the pie plate in the fridge for up to 5 days.
Key Limes versus Regular Lime
The limes you see most often in the grocery store are Persian limes, which are a hybrid between a key lime and lemon.
These limes are larger and more tart than key limes, which are less tart and more mellow.
They are also less expensive so it’s totally reasonable to substitute regular limes.
And most people can’t really tell the difference when they use regular limes in key lime desserts.
Tips and Tricks
- Make this even easier for yourself and substitute a premade graham cracker crust.
- Let the cream cheese soften to room temperature before you make the filling.
- Don’t skip the setting time! The pie needs time to firm up before you serve it.
