Fajita chicken salad is a zesty Southwestern take on the traditional sandwich filling. Fajita season, diced bell peppers, and diced red onion dress up the mayonnaise based salad.

Of course since we have chicken salad so often, I like to keep it interesting with lots of different varieties on the classic.
And this fajita chicken salad uses fajita seasoning and fajita veggies to spice up the lunchtime classic.
It’s an easy way to nip lunchtime boredom in the bud before it becomes a problem!
Fajita Seasoning versus Taco Seasoning
Fajita seasoning and taco seasoning are both popular spice blends you can find near the Mexican foods in the grocery store.
Taco seasoning generally is bolder with more cumin and chili powder.
Fajita seasoning has similar ingredients but in a milder blend.
Ingredients
To make this you’ll need:
- Chicken– Chopped rotisserie chicken is perfect
- Mayonnaise– Real mayo and not mayonnaise style dressing or Miracle Whip
- Fajita seasoning – Your favorite blend. You could also use taco seasoning if you prefer.
- Bell peppers– A small orange and a small yellow bell pepper both seeded and diced
- Red onion– Finely diced
- Cilantro– Fresh cilantro washed and chopped. If you don’t like cilantro either skip this or substitute fresh chopped parsley instead.
How to Make
Fajita chicken salad is so easy to make!
Just stir all of the ingredients together in a large mixing bowl.
Serve and enjoy right away or cover it and refrigerate it prior to serving.
Storing
Store fajita chicken salad in an airtight container in the fridge for up to 4 days.
Tips and Tricks
- You can use your own blend of fajita spices instead of the premade fajita seasoning or taco seasoning. Just mix 1/4 teaspoon salt, 1/4 teaspoon pepper, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder together.
- If you are using the cilantro, make sure you rinse all the grit away and dry the leaves well.
- For a little zip, you could add a diced seeded jalapeno.

Ingredients
- 4 cups chopped rotisserie chicken
- 3/4 - 1 cup mayonnaise
- 1 1/4 tbsp fajita seasoning
- 1 small orange bell pepper seeded & diced
