Hobo Casserole

Hobo casserole is a rich hearty dish featuring ground beef and veggies in a creamy sauce over au gratin potatoes. It’s the ultimate in easy meat and potatoes comfort dishes!

My family is big on meat and potatoes meals.

With 4 sons and a hungry husband, I love these kinds of meal because they keep the crew full and happy for more than 5 minutes.

And hobo casserole fits that bill without having to spend tons of time in the kitchen prepping.

So everyone is happy and I can make this even on a busy weeknight.

Ingredients

To make this you’ll need:

  • Ground beef– Go for leaner ground beef so it’s not too greasy.
  • Onion– Small yellow onion peeled and diced.
  • Bell peppers– 2 green peppers seeded and diced.
  • Chicken broth– You could use stock or even beef broth though that will change the flavor.
  • Heavy cream– Don’t substitute a lower fat dairy
  • Garlic powder– You can adjust the amount to suit your tastes
  • Butter– Thinly sliced into pats
  • Au gratin potatoes– 2 4 ounce boxes of your favorite kind of au gratin potatoes

How to Make

Hobo casserole is pretty easy to make!

Just cook the beef, onion, and peppers in a large skillet set over medium high heat, stirring and crumbling, until the beef’s completely browned.

Drain the grease.

Then stir the potatoes, seasoning mix pouches, broth, cream, and garlic in a 9×13″ baking dish you’ve sprayed with nonstick spray. 

Stir the beef mixture into the dish.

Tightly cover the dish with aluminum foil and bake at 425° for 30 minutes.

Uncover and bake for another 15 minutes.

Carefully remove the hot dish from the oven and let it rest for 10-15 minutes while the sauce sets up.

Serve warm and enjoy!

Storing Leftovers

Store leftovers in an airtight container or tightly wrapped in the baking dish in the fridge for up to 4 days.

Reheat in a hot oven or in a microwave until warmed through.

Tips and Tricks

  • You can make your life easier and buy a pre diced container of onion and pepper from the produce section of most grocery stores.
  • Feel free to stir in other veggies, like peas, into the beef mixture.
  • Don’t skip the resting time. You want the sauce to have time to set up while it rests.

Ingredients

  • 1 lb lean ground beef
  • 1 small yellow onion peeled & diced
  • 2 green bell peppers seeded & diced
  • 3 cups chicken broth
  • 1 - 1 1/4 cups heavy cream
  • 1/4 tsp garlic powder
  • 3-4 tbsp butter sliced into pats
  • 2 4 oz boxes au gratin potatoes

Instructions

  • Add the beef, onion, and peppers to a large skillet set over medium high heat. Cook, stirring and crumbling, until the beef's completely browned. Drain the grease.

  • Lightly grease a 9x13" baking dish and add the potatoes, seasoning mix pouches, broth, cream, and garlic to the dish. Gently stir until evenly combined.
    3 cups chicken broth, 1 - 1 1/4 cups heavy cream, 1/4 tsp garlic powder, 2 4 oz boxes au gratin potatoes
  • Add the beef mixture to the dish, again gently stirring until evenly incorporated. Spread out in an even layer and top with pats of butter.
    3-4 tbsp butter
  • Tightly cover the dish with aluminum foil and bake at 425° for 30 minutes.
  • Uncover and bake for another 15 minutes.
  • Carefully remove the hot dish from the oven, and let it rest for 10-15 minutes while the sauce sets up.
  • Serve warm & enjoy!
