Instant Pot Italian Potatoes

Instant Pot Italian potatoes are an easy side dish you can throw together in under half an hour. With only 4 ingredients, this will be your new go to side for any chicken, fish, beef, or pork dinner.

We are a meat and potatoes kind of family.

And while I am all about one pot meals, I still make enough things like grilled or roast chicken and pork chops that I need a good separate potato recipe.

And these Instant Pot Italian potatoes are it!

Super easy to prep and super quick in the Instant Pot with consistently tasty results.

They are sure to be a new family favorite!

Ingredients

To make these you’ll need:

  • Potatoes– Baby potatoes cut in half.
  • Italian dressing mix– A 1 ounce packet of your favorite kind
  • Chicken broth– You could substitute vegetable broth if needed.
  • Cheese– Freshly grated or shredded Parmesan

How to Make

These Instant Pot Italian potatoes are so easy!

Just put the liner in your Instant Pot and put the potatoes in the liner.

Sprinkle the Italian dressing packet evenly over the potatoes and gently toss them to coat.

Pour the broth into the liner.

Secure the lid on the Pot, making sure the vent valve is set to the sealed position.

Pressure cook on high for 6 minutes.

When the Pot beeps carefully open the vent valve to do a quick release.

Stir the Parmesan cheese into the potatoes.

Serve and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat them in the microwave until warmed through.

Tips and Tricks

  • You can make these in the slow cooker. Just put everything except the cheese in the slow cooker and cook it on low for 5-6 hours or on high for 3-4. Stir the cheese in about 15 minutes before serving. The potatoes are done when they are fork tender.
  • Add shredded mozzarella for extra cheesy potatoes.
  • You can garnish these with freshly chopped parsley for a little color.

Ingredients

  • 2-3 lbs baby potatoes halved
  • 1 1 oz pkt Italian dressing mix
  • 1 cup chicken broth
  • 1/2 cup freshly grated Parmesan can substitute shredded Parmesan cheese

Instructions

  • Add the liner to your Instant Pot, followed by the potatoes.
    2-3 lbs baby potatoes
  • Sprinkle the seasonings evenly out overtop, and gently toss to coat.
    1 1 oz pkt Italian dressing mix
  • Pour the broth gently out overtop.
    1 cup chicken broth
  • Add the lid, turning to close. Set the vent valve to the 'sealed' position.
  • Pressure cook on HIGH for 6 minutes, then carefully release the vent valve to perform a quick release.
  • Sprinkle the Parmesan cheese out over top, then gently stir to combine.
    1/2 cup freshly grated Parmesan
  • Serve warm and enjoy!

Notes
