Mongolian meatballs are an easy recipe to make right in your slow cooker! Reinvent frozen beef meatballs by cooking them in a sweet but savory Asian inspired sauce.
I almost always have a bag or two of frozen meatballs on hand.
And sure they are great for traditional favorites like Slow Cooker Spaghetti and Meatballs or Easy Swedish Meatballs.
But when you have them as much as we do, you have to add some other interesting flavors into the mix.
And this recipe for slow cooker Mongolian meatballs is such an easy way to bring Asian flair to the table.
We’re talking a 5 minute prep and a set it and forget style recipe that works so well as dinner served over steamed rice or as a yummy party appetizer with oodles of flavor from the Mongolian sauce.
What is Mongolian sauce?
These meatballs are smothered in a homemade Mongolian sauce.
Mongolian sauce is a sweet and savory recipe sauce that generally has equal parts sugar and soy sauce.
It’s flavored with ginger and garlic and super popular in Chinese American dishes like Mongolian beef.
Ingredients
To make these you’ll need:
- Meatballs– A 2 to 3 pound bag of your favorite frozen beef meatballs. You could substitute out chicken meatballs but you won’t get as much of that Mongolian beef style flavor.
- Sugar– Brown
- Soy sauce– You can use lower sodium soy sauce if you’re worried about this being too salty.
- Water
- Ginger paste– You can generally find this in the produce section near the Asian foods that are by the herbs.
- Garlic– Minced
- Cornstarch– To thicken the sauce
How to Make
Making slow cooker Mongolian meatballs is so easy!
Just whisk all of the ingredients except for the meatballs together in the bowl of your slow cooker until they are well combined.
Add the meatballs to the slow cooker and gently toss them with the sauce to coat.
Cover the slow cooker and cook on low for 4-5 hours or on high for 3 hours, stirring halfway through.
Just before serving, stir the meatballs to make sure they are smothered in the sweet and savory sauce.
Serve on toothpicks as an appetizer or over a bed of steamed white rice as dinner.

Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat in the microwave until warmed through.
Tips and Tricks
- Garnish these with thinly sliced green onions and toasted sesame seeds.
- Round out a meal with a side of your favorite steamed veggie and toss it in some of the sauce that’s left in your slow cooker.
- If you want a little more zip in your sauce you can add more garlic and ginger and a dried chile pepper.

Mongolian Meatballs (Slow Cooker Recipe)
Ingredients
- 2-3 lbs frozen beef meatballs
- 1 cup brown sugar
- 1 cup soy sauce
- 1 cup water
- 2 tsp ginger paste
- 1 tsp minced garlic
- 1 1/2 tbsp cornstarch
Instructions
- Add all of the ingredients to the bowl of the slow cooker, except the meatballs, and whisk them together until evenly combined.1 cup brown sugar, 1 cup soy sauce, 1 cup water, 2 tsp ginger paste, 1 tsp minced garlic, 1 1/2 tbsp cornstarch
- Add the meatballs and gently toss until they're completely coated.2-3 lbs frozen beef meatballs
- Cover and cook on LOW for 4-5 hours, or HIGH for 3, stirring 1/2 way through the cook time. Give everything a good stir to evenly coat at the end.
- Serve as an appetizer with toothpicks, or warm over a bed of steamed white rice for a meal.
