As our boys have gotten older, family gatherings have started to grow.

Their significant others are always welcome at our holiday table.

And this means making one turkey or a holiday ham is just not enough to cut it these days.

For a second festive main course, I feel like there’s more room to be creative and stray from the traditional a bit.

This pumpkin butter roasted pork tenderloin is definitely an appropriate main for any holiday gathering.

We often use it for our second entree choice at holiday dinners.

It’s a bit more creative but still feels traditional with the pumpkin butter apple sauce coating.

And it’s so easy with only a 5 minute prep!

With its addicting sweet and savory sauce with earthy thyme, everyone will be asking for seconds!

PUMPKIN BUTTER ROASTED PORK TENDERLOINS IN A CAST IRON SKILLET

Ingredients

To make this you’ll need:

  • Pork tenderloin– about a pound of it
  • Olive oil– To sear the pork in
  • Salt and pepper– To taste
  • Pumpkin butter– If you have homemade pumpkin butter you can use that or use your favorite store bought kind
  • Apple sauce– Unsweetened
  • Thyme– Fresh thyme leaves

How to Make

This pumpkin butter roasted pork tenderloin is so easy to make!

Just preheat your oven to 425 with the rack in the middle.

Whisk the pumpkin butter, apple sauce, and thyme together in a small mixing bowl until evenly combined.

Set the pumpkin butter sauce aside.

Then take the pork out of its package, draining off any juices, and patting it dry with paper towels.

Season the pork tenderloin liberally on all sides with salt and pepper.

Heat olive oil in a cast iron skillet set over medium high heat.

When the skillet is hot, sear the pork on all sides for roughly 2 minutes per side, turning the pork as needed.

Take the skillet off of the heat while you spread the pumpkin butter sauce all over the pork.

Roast the pork tenderloin at 425 for 15 to 20 minutes or until a meat thermometer reads 145.

Remove the pork from the oven and let it rest on a cutting board for 10 to 15 minutes.

Slice into 1/4″ to 1/2″ slices with a sharp knife.

Serve and enjoy!

Storing Leftovers

Store leftover slices of pork in an airtight container in the refrigerator for up to 5 days.

Tips and Tricks

  • Make sure the skillet is nice and hot and the oil is shimmery before you sear the pork.
  • You’ll know the pork is ready to turn when it easily pulls away from the skillet.

Ingredients

  • 1 lb pork tenderloin
  • 1 tbsp extra virgin olive oil
  • salt & pepper to taste
  • 1/3 - 1/2 cup pumpkin butter
  • 2 tbsp unsweetened apple sauce
  • 1 tbsp fresh thyme leaves

Instructions

  • Preheat your oven to 425° with the main rack set in the middle. Also set a cast iron skillet to heat over medium high heat.
  • Add the pumpkin butter, apple sauce, and thyme to a small mixing bowl. Whisk them together until evenly combined. Set aside.
    1/3 - 1/2 cup pumpkin butter, 2 tbsp unsweetened apple sauce, 1 tbsp fresh thyme leaves
  • Remove the pork tenderloin from it's packaging, drain off any juices, and then pat it completely dry using paper towels. Season it liberally on all sides with salt & pepper.
    1 lb pork tenderloin, salt & pepper
  • Once the skillet's hot add the olive oil and sear the pork loin on all sides, roughly 2 minutes per side and turning as needed. Remove the skillet from heat.
    1 tbsp extra virgin olive oil
  • Spread the pumpkin thyme sauce evenly out overtop of the seared pork loin, using it all.
  • Bake for 15-20 minutes, or until a meat thermometer reads 145°.
  • Transfer the pork loin to a cutting board and let it rest for 10 - 15 minutes.
  • Using a sharp knife slice the pork loin into 1/4 or 1/2 inch slices, serve warm, and enjoy!
