Salsa fresca instantly brightens up so many things.
Taco night, burrito bowls, grilled chicken or fish, and even a bowl of tortilla chips.
Also known as pico de gallo, salsa fresca is typically includes chopped tomatoes, onion, cilantro, jalapeño, lime juice, and salt.
Unlike blended salsas, salsa fresca is left raw and diced for a – you guessed it- fresher taste.
With its bold, bright flavors and minimal prep, you’ll be wanting to make this every time you open a bag of tortilla chips.

Ingredients
To make this you’ll need:
- Cilantro– A packed cup of fresh, coarsely chopped cilantro leaves
- Garlic– Pressed or finely minced fresh garlic cloves
- White onion– Peeled and chopped
- Jalepeño– Cut in half lengthwise
- Lime
- Salt– To taste

How to Make
Salsa fresca is very easy to make thanks to the handy dandy food processor.
Add the cilantro leaves and garlic to the bowl of a food processor fitted with the blade attachment.
Pulse for 30 seconds to combine and scrape down the sides of the bowl with a spatula.
Add the onion and jalapeno to the bowl and pulse until finely chopped.
Transfer the mixture to a small mixing bowl.
Add half the tomatoes to the bowl of the food processor, then pulse them until finely chopped.
Put the processed tomatoes into the mixing bowl along with the other veggies and then repeat this for the rest of the tomatoes.
Juice the lime and stir in the juice and salt.
Serve and enjoy!

Serving Suggestions
Serve salsa fresca any time you would serve pico de gallo.
It’s delicious on:
- tacos
- salads
- burrito bowls
- grilled fish or chicken
- chips
- quesadillas

Storing Leftovers
While the leftovers will be safe to eat for several days if you store them in an airtight container in the fridge, the salsa will start to break down and get watery the longer it sits.
Because of that, it’s best within the first day or so.
Tips and Tricks
- Be sure to wash your cilantro before using it in the recipe. Cilantro grows close to the ground and its leaves are a perfect hiding place for grit and dirt.
- Don’t want it spicy? Omit the jalapeño. Want it spicier? Use more of them!
- Not a cilantro fan? Use fresh flat leaf parsley instead.
