This red white and blue cookie cake is easy to whip up, and the perfect way to celebrate Summer. Change the frosting, candy, and sprinkle colors and you can easily adapt this cookie pie to suit any occasion!
Our house always seems to be the place where the parties are at.
Whatever the occasion, if we don’t plan on hosting in advance- our kids call and ask what we’re doing.
So- obviously, we’re having a get-together.
I love a quick and easy dessert for just these reasons, and a cookie cake has never let me down.
Whether you planned on company, or have unexpected guests, this red white and blue cookie cake is perfect for entertaining.
It’s also easily customizable for an event or occasion, just making it even better.
Ingredients Needed
Since this cookie cake is made from scratch, it does have a bit of a longer ingredient list.
To make it you’ll need:
- Butter – a whole stick of butter, softened to room temperature. I recommend using salted butter, but you can use either.
- Sugar – Both granulated and brown sugar, a half cup of each.
- Egg – One large egg
- Extract – A couple teaspoons of vanilla extract, but almond can be used as a substitute.
- Flour – Plain, all purpose flour
- Salt
- Baking Powder
- Baking Soda
- Candies – Both snowball, or Red White & Blue, mix M&M’s and red white and blue sprinkles
- Frosting – A single can of store bought frosting, any brand, but needs to be white
- Food Coloring – red food coloring specifically, and I recommend the gel kind.
That’s it. Gather your ingredients together, and let’s get baking!
How To Make
While it may have a slightly larger ingredients list than normal, this red white and blue cookie cake is still super easy to whip up.
To a large mixing bowl add the butter, sugars, egg, and extract.
Cream the ingredients together until light & fluffy. You can do this by hand, but I recommend using a hand mixer or a stand mixer since it’s easier on your arms.
In another mixing bowl add the flour, salt, baking soda, and baking powder. Stir everything together until the mixture’s well combined.
Pour the flour mixture into the wet batter, a little at a time, stirring to evenly incorporate between additions. Continue until all the flour’s been incorporated and the cookie dough batter has come together.
Add the candies & sprinkles to the batter, and fold in until evenly combined.
Rub a circular cake pan down evenly with butter, then flour it. Shake it off to discard the excess coating.
Add the cookie dough batter to the prepared pan, the press it out into an even layer.
Bake the cookie pie at 350F for 20 minutes, then carefully remove the pan and let the pie cool on a wire rack until cooled completely.
Once cooled completely, it’s time to decorate the cookie pie.
Add drops of red food coloring to the jar of frosting, stirring to combine, until your frosting is a nice red. This may take a couple of tries- it’s easier to get pink frosting than red.
Add a large star tip to the bottom of a pastry bag, then scoop the red frosting into the bag.
Pipe small red stars around the border of the cookie cake, and a couple in the center too.
Place an M&M candy in the center of each frosting star, then sprinkle some extra festive sprinkles evenly out over the red white and blue cookie pie.
Slice into wedges, and serve!
TIPS & TRICKS
- You can make this cookie pie ahead of time, but wait to decorate until just before serving- otherwise you run the risk of the colors on both the frosting and candies bleeding.
- If you really need to shortcut this recipe, you can use store bought cookie dough but will have to adjust the bake time.

Red White And Blue Cookie Cake
Ingredients
- 1/2 cup Butter softened
- 1/2 cup Sugar
- 1/2 cup Brown Sugar
- 1 large Egg
- 2 teaspoons Vanilla extract
- 1 1/2 cups all purpose flour
- 1/8 teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon Baking Soda
- 1 cup Snowball M&M's or any kind of Blue M&M's - see link
- 1/2 cup Red White and Blue Sprinkle Mix - of choice
- 1 can Pillsbury Vanilla Frosting
- Red Food Coloring Gel
Instructions
- In a large bowl, mix together the Butter, Sugar, Brown Sugar, Egg, and Vanilla, until creamy and fluffy.
- In a separate bowl, add the Flour, Salt, Baking Powder, and Baking Soda, and mix well. Add the Flour mixture to the Butter mixture a little at a time, stirring between additions, until all the flour has been incorporated and the mixture is like Cookie dough.
- Add Sprinkles and M&M's to the bowl, and gently fold into the dough.
- Grease and Flour the Cookie Pan, and press the Cookie Dough evenly into the pan, smoothing the top with the back of your spoon.
- Bake at 350 for 20 minutes, then carefully remove to a wire rack to cool completely.
- When cooled; add several drops of the Red Food Coloring Gel to the can of Frosting, until you get a bright Red color. Stir well to mix completely.
- Place a large Star Tip in a Pastry bag, and place the Red Frosting in the Pastry bag. Pipe small Stars around the edge, and in the middle of the Cookie Cake.
- Place an M&M in the center of the Frosting, and add more Sprinkles to the top of the Cookie Cake.
- Serve, and ENJOY!
