Robin’s Egg Chocolate Peanut Butter Eggs

Robin’s egg chocolate peanut butter eggs are a homemade version of peanut butter cups with a festive twist. These adorable spring candies are easy to make and so yummy!

I love making homemade candy for my kids.

But I don’t love complicated, convoluted candy recipes that involve tempering chocolate or melting sugar.

No thanks.

These homemade peanut butter eggs don’t have any of those tough steps and the result is a cute, Easter candy you’ll love.

Ingredients

To make these, you’ll need:

  • Peanut butter– Use creamy peanut butter. Make sure you avoid using natural peanut butter because the eggs won’t set up right.
  • Butter– Let it soften on the counter first.
  • Powdered sugar– Do not substitute.
  • Milk– The amount you will need varies by the weather and where you live as well as preferences.
  • Candy melts– Go for baby blue candy melts to get the robin’s egg color.
  • Cocoa powder– Use good cocoa powder.

How to Make

To make this homemade peanut butter candy, start by beating your peanut butter and softened butter on high until smooth.

Then, mix in your powdered sugar and mix until well combined.

Add in your milk one tablespoon at a time, while mixing until you have a smooth cookie dough consistency.

Now, remove the peanut butter dough from the mixer and roll it out onto parchment paper until it’s about a half inch thick.

Use an egg shaped cookie cutter to cut out 1 dozen eggs.

Dip each egg into your melted candy and set back onto your parchment paper.

Place in the freezer for 10 to 15 minutes until the chocolate has hardened.

Once the chocolate has set, you can add the texture to make them look like robin’s eggs.

To do it, add water to your cocoa powder in a small bowl until you have a thin paint consistency.

Dip a small pastry brush in and flick your cocoa mixture onto your eggs.

Serve and enjoy!

How to Melt Candy Melts

Melting candy melts is a lot like melting chocolate, but a touch more forgiving.

To do it, put the candy melts in a microwave safe bowl.

Microwave them on high for 30 seconds.

After 30 seconds, stir them well and then melt them in 15 second increments, stirring after each time until the candy is smooth.

Storing

I recommend storing these in a sealed tin in the fridge.

If you have more than one layer of candy to store, lay a single layer out and then put a piece of parchment paper on top of the first candy layer.

Add another layer of candy on top of the parchment.

This will keep the candy from sticking together.

Tips and Tricks

  • You don’t have to paint the eggs with cocoa if you don’t want but then they won’t have the speckled robin’s egg look.
  • To thin out the candy melts and ensure they will have a pretty sheen, stir a teaspoon of coconut oil into the melted candy melts until it is dissolved.
  • You need to work quickly so the melts don’t harden. If you find they are hardening, you can set the bowl of melted candy melts in a bowl of hot water.
