Smoked Baby Potatoes

Smoked baby potatoes are the side dish you need this summer. Beer mustard and barbecue rub bring tons of flavor to complement the smokiness of the potatoes.

I love our smoker.

You’d think making anything in the smoker may be difficult.

But, spoiler alert, it’s not!

Using a smoker is just about as easy as using a slow cooker but you get so much delicious smokey flavor in whatever you are cooking.

Because smoking food gives it so much flavor, that means you don’t have to add a lot of ingredients in order to make things taste good.

These smoked baby potatoes, for example, are only 3, maybe 4 ingredients.

This makes for a super easy prep without sacrificing any flavor.

Ingredients

To make this you’ll need:

  • Baby potatoes– 2 pounds of bite sized potatoes, rinsed well.
  • Mustard– Beer mustard. You could also sub dijon mustard if you prefer.
  • Barbecue rub– Your favorite store bought kind.
  • Chopped fresh parsley– Optional for garnish.

How to Make

Making smoked baby potatoes is pretty easy.

Start by washing the baby potatoes well and patting them dry.

Put the washed potatoes in a large mixing bowl.

Stir the mustard onto the potatoes in the mixing bowl until they’re evenly coated.

Then gently toss the potatoes with the barbecue rub until the potatoes are evenly seasoned.

Spread out the seasoned potatoes in an even layer in a disposable 9×13″ aluminum pan.

Smoke the potatoes at 250° for 2 – 2 1/2 hours.

After 2 to 2.5 hours, test to see if the potatoes are fork tender.

If not smoke them for another 15 minutes or until they are fork tender.

When they are fork tender, transfer them to a serving dish, sprinkle with fresh parsley, serve, and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat in the microwave until warmed through.

What wood should I use to smoke potatoes?

You can use almost any hard or fruit wood you have on hand or like.

Some of the best woods to smoke potatoes are:

  • apple wood
  • hickory
  • cherry
  • mesquite

Tips and Tricks

  • Use smaller potatoes or cut them into roughly 2 inch pieces.
  • Scrub them well since you won’t peel them.
  • You can adjust the seasoning and add more or less of the barbecue rub, or add salt and pepper if you like.

Ingredients

  • 2 lbs little (bite sized) potatoes
  • 1/2 cup beer mustard
  • 4 tbsp barbecue rub
  • 1 tbsp chopped fresh parsley leaves for garnish, optional

Instructions

  • Thoroughly wash the potatoes, pat them dry, then transfer them to a large mixing bowl.
    2 lbs little (bite sized) potatoes
  • Add the mustard to the mixing bowl then stir everything together until they're evenly coated.
    1/2 cup beer mustard
  • Sprinkle the rub overtop, then gently toss again until the potatoes are evenly coated.
    4 tbsp barbecue rub
  • Transfer the seasoned potatoes to a disposable 9x13" aluminum pan and spread them out in an even layer.
  • Smoke at 250° for 2 - 2 1/2 hours. Test to see if the potatoes are fork tender. If not smoke another 15 minutes.
  • Once tender transfer them to a serving dish, serve, and enjoy!
