This smoked creamy corn dip has so much big, bold flavor both from the combination of ingredients and the cooking method.

It’ll be an instant family favorite and you won’t mind at all since there’s barely any prep or clean up!

Ingredients

To make this you’ll need:

  • Corn– Frozen corn, thawed and drained.
  • Jalapenos– Large ones, seeded and diced. If you want this dip to be milder, you can omit them or just use one or part of one instead.
  • Diced tomatoes and green chiles– 1 can, undrained
  • Bacon– Cooked crisp and crumbled
  • Cheese– Both shredded Mexican blend cheese and cream cheese
  • Spices– Garlic powder, barbecue rub, and smoked paprika

How to Make

The beauty of this dip is it is so easy to make!

To do it, just add all of the ingredients to a 9×13″ disposable aluminum pan.

Then smoke it at 250 for 1 hour.

After an hour, stir everything together to evenly combine.

Serve with your favorite dippers and enjoy!

Dipping Ideas for the Best Corn Dip

We love dipping lots of different things into this creamy corn dip.

Our favorites are:

  • crackers
  • tortilla chips
  • pretzels
  • celery and carrot sticks
  • baguette slices

What kind of wood should I use to smoke this?

A nice fruity wood like apple, peach, or cherry works well with this.

You also can’t go wrong with hickory, maple, or mesquite.

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave to warm through prior to serving.

Tips and Tricks

  • Don’t have frozen corn? You can sub canned corn, just make sure it’s well drained. The recipe will take roughly four cans.
  • There’s no need to soften the cream cheese beforehand since you are just tossing it into the pan.
  • If you are vegetarian or cooking for a vegetarian, you can omit the bacon.
