- 5-6 cups frozen corn thawed & drained
- 2 large jalapenos seeded & diced
- 1 can diced tomatoes & green chiles UNDRAINED
- 4 slices bacon cooked crisp & crumbled
- 1 cup shredded Mexican blend cheese
- 4 8 oz blocks cream cheese
- 1 tsp garlic powder
- 1 1/2 tsp barbecue rub
- 1/4 tsp smoked paprika
Add all of the ingredients to a 9x13" disposable aluminum pan.
Smoke at 250°F for 1 hours.
Stir everything together to evenly combine.
Serve immediately with your favorite dipping options.
- Don't have frozen corn? You can sub canned corn, just make sure it's well drained. The recipe will take roughly four cans.
- There's no need to soften the cream cheese beforehand since you are just tossing it into the pan.
- If you are vegetarian or cooking for a vegetarian, you can omit the bacon.
