Swamp Potatoes (Slow Cooker Recipe)
Swamp potatoes, also know as swamp beans or smothered green beans is the viral TikTok twist that combines potatoes, green beans, smoked sausage and butter with Cajun seasoning. This easy slow cooker recipe has almost no prep but delivers big, bold results each time.

Swamp potatoes is one those recipes that took TikTok by store for good reason!
It’s basically swamp beans but with potatoes added into the mix, turning it into a really hearty, bold side.
We’re talking green beans, potatoes, and smoked sausage slow cooked in a rich, buttery sauce loaded with Cajun seasoning.
The slow cooker does everything, making it a simple recipe that still brings tons of comfort and Southern-inspired flavor.
No wonder why it’s so popular!

Ingredients
To make this you’ll need:
- Green beans– Fresh green beans with the ends trimmed off.
- Potatoes– Small potatoes like red potatoes or new potatoes though you can use bigger potatoes and cut them into 1″ pieces.
- Yellow onion– Diced
- Smoked sausage– Cut into coins
- Butter– Do not use salted butter. Slice it into pats.
- Cajun seasoning
- Black pepper– This optional but highly recommended

How to Make
Swamp potatoes are so easy to make!
Just add the cut potatoes to the bowl of a slow cooker and sprinkle half the Cajun seasoning over top of the potatoes.
Top with pats of butter spread out evenly over the potatoes.
Spread the green beans and onions out in an even layer over the seasoned potatoes.
Season the veggies with the remaining seasoning and pepper evenly out overtop.
Top everything with an even layer of sausage slices.
Put the lid on your slow cooker and cook on HIGH for 4 hours, or LOW for 6 hours.
Give it a gently stir every hour or so.
Prior to serving, stir it well.
Serve and enjoy!

Storing Leftovers
Store leftovers in an airtight container or right in the bowl of your slow cooker with the lid on in the fridge for up to 4 days.
Reheat in the slow cooker or in the microwave until warmed through.

Tips and Tricks
- I do NOT recommend using canned beans in this recipe as they’re soft to begin with and can break down into mush when slow cooked for hours.
- You can substitute diced ham for the smoked sausage.
- Do NOT add liquid! I know it seems like you should, after all you need some to keep things from burning but don’t do it. The ingredients will create their own liquid while cooking.

- 2 lbs fresh green beans ends trimmed
- 1 1/2 lbs small potatoes halved lengthwise
- 1 large yellow onion peeled & diced
- 14-16 oz smoked sausage sliced into coins
- 1 stick butter NOT salted butter, sliced into pats
- 1 tbsp Cajun seasoning
- 1/2 tsp black pepper optional, but recommended
Instructions
- Add the cut potatoes to the bowl of a slow cooker. Sprinkle half the Cajun seasoning evenly out overtop of the potatoes. Top with pats of butter.1 1/2 lbs small potatoes, 1 tbsp Cajun seasoning, 1 stick butter
