The Easiest Ice Cream Sandwich Cake

The easiest ice cream sandwich cake turns ice cream sandwiches into a delicious ice box cake. With only 5 ingredients, you won’t believe how quick this frozen dessert comes together.

Who needs regular cake, especially when the weather warms up?

Not this family!

For all late spring through early fall birthdays and special occasions, we are firmly an ice cream cake family.

But y’all, have you seen the prices on the premade ones lately?

OUCH.

I’m here to let you know that you don’t have to hurt your wallet ever again to enjoy a yummy ice cream cake.

This ice cream sandwich cake tastes just like a premade ice cream cake but for a fraction of the cost.

And don’t think it’s hard to put this together either.

You can make this freezer cake even if you have literally zero skill in the kitchen.

It’s that easy!

Ingredients

To make this you’ll need:

  • Ice cream sandwiches– I use 24 of the regular vanilla ice cream filled sandwiches. If you prefer you could get the kind filled with neopolitan ice cream instead.
  • Whipped topping– Like Cool Whip. Let it thaw before you use it.
  • Toppings– Crushed Oreos, chocolate syrup, and mini M&M’s.

How to Make

The hardest part of this whole ice cream cake situation is unwrapping the ice cream bars!

To make it, start by unwrapping 12 ice cream sandwiches and lay them in a 9×13″ baking dish to form an even layer.

Then, spoon half of the softened whipped topping to the top of the ice cream bar layer and gently spread it out into an even layer, like frosting.

Repeat this with another layer of the remaining ice cream sandwiches.

Spread the rest of the whipped topping evenly out over the ice cream sandwiches.

Top with crushed oreo cookies, candies, and a drizzle of chocolate syrup.

Freeze the ice cream cake for 1-2 hours or until set, before slicing and serving.

Enjoy!

Storing

Store this ice cream sandwich cake in the freezer. I like to wrap it lightly in plastic wrap and place it into a large freezer bag to prevent freezer burn.

Variations

Part of the fun of making your own ice cream cake at home is that you can go crazy with the topping and put whatever you like on it.

You don’t need to stick to the chocolate syrup, Oreos, and M&M’s.

Other ideas include:

  • A drizzle of peanut butter, crushed peanut butter cups, and Reese’s Pieces
  • Caramel and chocolate drizzle with crushed Milky Ways or Snicker bars
  • Nutella drizzle with chopped up chocolate hazelnut candies
  • Sprinkles and frosting for a birthday cake kind of feel.

Really any and all of the above would work.

  • 1 16 oz tub cool whip topping softened
  • chocolate syrup
  • crushed oreo sandwich cookies
