Once it simmers, turn the heat down and let it cook down, stirring frequently, until the color deepens and the juices reduce by roughly 1/4 of the volume or roughly 20 to 25 minutes.
When the mixture’s thickened, but still somewhat juicy, it’s done.
Remove the skillet from heat.

For even longer storage, you can process the jars in a boiling water bath for 20-25 minutes and store them in a cool, dark place for up to a year.
