Hot Dog Fried Rice

This easy hot dog fried rice is the tastiest way to use up leftover hot dogs. It's a quick, one pot meal that's always a hit with the kids, and one even adults enjoy- especially since it's ready in under 20 minutes!

Ingredients

  • 3 leftover grilled hot dogs slice in half lengthwise, then into thin slices
  • 3 tbsp salted butter
  • 1 small yellow onion peeled & diced
  • 3 tsp minced garlic
  • 3 cups cold steamed white rice
  • 2 large eggs beaten
  • 2 tbsp sesame oil
  • 1 cup frozen peas & carrots
  • 2 tbsp soy sauce
  • 1 green onion thinly sliced (for garnish)

Instructions

  • Add the butter to a large skillet set over medium heat. When the butter's melted, add the onions- stirring often until tender.

  • Add the garlic to the skillet, stirring to combine, and let it cook for 30-60 seconds- just until fragrant.

  • Add both the sesame oil and the rice to the skillet, stirring together to combine. Cook, stirring often, for 3-5 minutes.
    2 tbsp sesame oil, 3 cups cold steamed white rice
  • Push the rice to one side of the skillet, pour the eggs into the clear side of the skillet, and scramble. Once cooked through, stir them into the rice mixture.

  • Add the peas and carrots, hot dogs, and the soy sauce- stirring until combined and the peas and carrots are heated through.

  • Serve warm, topped with sliced green onions.

Notes

  • If you want to add more citrus flavor to this recipe, you can add a can of drained pineapple tidbits.
  • Don't have leftover hot dogs on hand? You can use canned spam. Just slice it, then chop it, and sauté until lightly crisped. Set it aside, and proceed with the recipe as written.
  • For best results use COLD steamed white rice.
