Add the butter to a large skillet set over medium heat. When the butter's melted, add the onions- stirring often until tender.
3 tbsp salted butter, 1 small yellow onion
Add the garlic to the skillet, stirring to combine, and let it cook for 30-60 seconds- just until fragrant.

Add both the sesame oil and the rice to the skillet, stirring together to combine. Cook, stirring often, for 3-5 minutes.
2 tbsp sesame oil, 3 cups cold steamed white rice
Push the rice to one side of the skillet, pour the eggs into the clear side of the skillet, and scramble. Once cooked through, stir them into the rice mixture.

Add the peas and carrots, hot dogs, and the soy sauce- stirring until combined and the peas and carrots are heated through.
1 cup frozen peas & carrots, 2 tbsp soy sauce, 3 leftover grilled hot dogs
Serve warm, topped with sliced green onions.
