- 2 large sweet potatoes washed & scrubbed (do not peel)
- 1 tbsp extra virgin olive oil
- salt & pepper to taste
Using the tines of a sturdy fork, poke holes all over and into the sweet potatoes.
2 large sweet potatoes
Rub them all over with the oil, then season with salt & pepper.
1 tbsp extra virgin olive oil, salt & pepper
Place the prepared sweet potatoes in the basket of an air fryer and cook at 400° for 25-30 minutes, just until they're fork tender. If they aren't fork tender after the cook time's elapsed, then continue cooking them in 2-3 minutes intervals until they are.
Using tongs carefully remove the hot potatoes from the air fryer, then transfer them to a waiting serving plate, and let them rest for 5 minutes.
Serve and enjoy!
- Do NOT skip the step of poking holes into the sweet potatoes. This allows steam to escape while they cook, which prevents them from exploding.
- If the sweet potatoes aren't done after 25 to 30 minutes, let them keep cooking in 2 to 3 minute intervals until they are.
- Do not skip letting the sweet potatoes rest. They need this time to cool so you can safely handle them.
