Slow cooker cheesy Rotel tacos are a set it and forget it dinner made with seasoned meat, creamy melted cheese, and zesty Rotel tomatoes. This is an easy, crowd pleasing twist on taco night perfect for batch cooking or serving to a crowd!

- 3 lbs ground beef cooked, crumbled, & drained of grease
- 1 1 oz pkt taco seasoning
- 1 16 oz block velveeta cheese cubed
- 1 15 oz can Rotel tomatoes with green chiles undrained
- 1/4 cup milk
- small flour tortillas for serving
- shredded lettuce for serving
Add the cooked beef, taco seasoning, cubed cheese, undrained tomatoes, and milk to the bowl of a slow cooker. Stir everything together until evenly combined.

Cover and cook on LOW for 4 hours.
Stir everything in the slow cooker well to evenly incorporate.
