Football season is fast approaching and that means football parties, tailgates, and casual game day get togethers.

I always like to put out something to eat anytime we have people over for the game.

And while you can’t go wrong with appetizers, sometimes I know everyone will want something heartier.

These slow cooker cheesy Rotel tacos feed a crowd with barely any work.

Just set out tortillas and everyone’s favorite toppings, and you’ve got an easy build-your-own taco bar.

And if you’re not a football family this recipe still works so well to make once and serve all week long in tacos, over baked potatoes, or even repurposed into casseroles.

The combination of seasoned meat, creamy cheese, and Rotel tomatoes will have everyone coming back for seconds.

Ingredients

To make these you’ll need:

  • Ground beef– Cooked, crumbled, and drained of the grease.
  • Taco seasoning– Your favorite kind.
  • Velveeta– A 16 ounce block cut into cubes. Don’t sub actual cheese because it doesn’t give you the same creaminess when it melts.
  • Rotel tomatoes– An undrained 15 ounce can of Rotel tomatoes with green chiles.
  • Milk– Whatever dairy milk you have in your fridge.
  • For serving– Small flour tortillas, shredded lettuce, and any of your other favorite taco toppings.

How to Make

These slow cooker cheesy Rotel tacos are so easy to make.

Just stir together the cooked beef, taco seasoning, cubed Velveeta, tomatoes, and milk in the bowl of a slow cooker.

Put the lid on the slow cooker and cook everything on LOW for 4 hours.

Stir to evenly incorporate everything.

Serve with tortillas, lettuce, and your other favorite toppings.

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat in the microwave or slow cooker until warmed through.

Ingredients

  • 3 lbs ground beef cooked, crumbled, & drained of grease
  • 1 1 oz pkt taco seasoning
  • 1 16 oz block velveeta cheese cubed
  • 1 15 oz can Rotel tomatoes with green chiles undrained
  • 1/4 cup milk
  • small flour tortillas for serving
  • shredded lettuce for serving

Instructions

  • Add the cooked beef, taco seasoning, cubed cheese, undrained tomatoes, and milk to the bowl of a slow cooker. Stir everything together until evenly combined.
    3 lbs ground beef, 1 1 oz pkt taco seasoning, 1 16 oz block velveeta cheese, 1 15 oz can Rotel tomatoes with green chiles, 1/4 cup milk
  • Cover and cook on LOW for 4 hours.
  • Stir everything in the slow cooker well to evenly incorporate.
  • Serve warm in tortillas topped with shredded lettuce with other desired toppings, and enjoy!
