Pulled pork is a staple for summer parties and fall tailgates.

We alwasy make a huge batch of Crockpot pulled pork or smoked pulled pork for these events.

And I like to make enough so I know we’ll have extras since it makes for such good round two recipes.

And these pulled pork walking tacos are a delicious, easy, whimsical way to use up those leftovers.

With almost no work whatsoever, you get a portable meal loaded with tender pork, crunchy chips and your favorite toppings.

They’re also incredibly easy to customize, which makes them perfect for feeding a family with different preferences.

Make these and you know everyone will be excited to dig right in.

Ingredients

To make these you’ll need:

  • Pulled pork– Preferably barbecued. If it it’s not just mix it with some barbecue.
  • Chips– 1 ounce bags of corn chips like Fritos. You could also use Nacho Cheese Doritos or plain potato chips.
  • Coleslaw– The creamy kind.
  • Red onion– Pickled.
  • Pickles– Dill pickle chips.
  • Barbecue sauce– Your favorite kind.

How to Make

Pulled pork walking tacos are so easy to make!

Just gently squeeze each bag to lightly crush the chips, then open them.

Add a large spoonful of barbecue pork to each bag of chips.

Top each with a scoop of coleslaw, some pickled onions, pickles, and finish with a drizzle of barbecue sauce.

Repeat this for all bags or let everyone build their own

Serve immediately, and enjoy!

Storing Leftovers

Don’t save assembled pulled pork walking tacos.

They will get soggy in the fridge.

You can store any leftover pork for about 4 days after it was first cooked.

  • These are my suggested toppings but you can use only some of them or all of them in whatever amount you like.
  • Want it to feel more taco like? Skip the coleslaw, pickled onions, and pickles and use sour cream, pico, and guacamole instead.
  • Serve these with disposable forks so you can throw away everything when you are done eating. This is particularly useful if you make these for a tailgate.
