Pulled Pork Walking Tacos

Pulled pork walking tacos are an easy way to reinvent your leftovers for a fun, crowd-pleasing meal. Loaded with smoky, savory pork, crunchy chips, and your favorite toppings, they're the perfect combination of barbecue and taco night in one handheld dinner.

  • Gently squeeze each bag to lightly crush the chips, then open them.
    8 1 oz bags corn chips
  • Add a large spoonful of barbecue pork to each bag of chips.
    4 cups barbecue pulled pork
  • Top each with a scoop of coleslaw, some onions, pickles, and finish with a drizzle of barbecue sauce. Repeat for all bags.
    2 cups creamy cole slaw, 1 cup pickled red onion, 1 cup dill pickle chips, barbecue sauce
  • Serve immediately, and enjoy!

Notes

  • These are my suggested toppings but you can use only some of them or all of them in whatever amount you like.
  • Want it to feel more taco like? Skip the coleslaw, pickled onions, and pickles and use sour cream, pico, and guacamole instead.
  • Serve these with disposable forks so you can throw away everything when you are done eating. This is particularly useful if you make these for a tailgate.
